In the glass, the wine pours a deep yet bright red hue, while aromas of ripe cherry, resinous herbs, pine, and gravelly earth lead into a full-bodied palate with a firm backbone of acidity, rich tannins, and savory depth.     100% Sangiovese from estate vineyards located in Monti in Chianti, a “micro-area” of Gaiole in Chianti. Soils combine alberese (limestone) and galestro (schist) with clay. Grapes are selected from younger vines in the estate’s top vineyard, San Marcellino. Hand-harvested. Grapes are pressed gently after a 30-minute maceration (rosé de pressurage). Fermented on indigenous yeasts at low temperatures in stainless steel tank. Aged on fine lees in tank for three months.

    Demougeot’s Pommard has a good balance of characteristics drawn from two very different village parcels. A blend of unusual names, La Rue au Porc and En Boeuf, in English could be looselytranslated as Pork Street and In Beef—wines apparently good with food... La Rue au Porc was planted in 1948 and is composed of deep clay and limestone rock topsoil—the muscle and weight of  the wine. En Boeuf is in the Grande Combe, a somewhat narrow valley far to the west of the appellation on the north hill facing south on a steep slope of shallow rocky topsoil all closer to forests and in the direct path of colder winds from the countryside to the west, presenting almost a complete contrast to La Rue au Porc. Planted in 1979, the position of these vines balances the wine with mineral, tension, cut and lift.

    The old Chardonnay vines that make up this delicious Chablis come from the family of Romain’s mother, Dominique. Located on a south-east facing hillside above the tiny town of Villy, Dominique’s family planted these vines in 1932, and has been making wine here for just on 90 years. It is a “chunky” vineyard composed of primarily Portlandian limestone with less clay than is found elsewhere in Chablis. The sun exposure of the vineyard is excellent, while the planting is dense with 6,000 vines per hectare that are maintained by massal selection and manual cultivation. Hand picked fruit, gentle pneumatic pressing, 100% native yeast and raised in INOX tanks with 12 months aging. The wine offers scents of pear and lemongrass, while the palate suggests delicate hazelnut and nutmeg with an iodized maritime quality and fresh mineral acidity that accompany its persistent finish.
