Sourcing includes Seven Springs, Koosah, Royer, along with Johan and Shea, among others. The VGW gets the 00 treatment, hyperoxidised, and a very reductive approach in elevage, with 12 months in barrel and no battonage. It’s lithe, airy on the nose, fresh herbs, and sea air alongside lemon zest and thyme.
