    Our Winex exclusive cask was aged for 8 years, spending just over 7 years in ex-Buffalo Trace Bourbon barrels and then transferred into fresh Sandeman Ruby Port Casks for 6 months. At 55.9% ABV we recommend just a splash of water. The nose is complex and layered with cocoa powder, stewed cherries and biscuit peeking through the distinctive peat. The peat from Kilchoman has always stood out in my mind because it lacks any medicinal or burnt rubber qualities that turn many off to a peated scotch. On the palate it opens up with a hint of sweetness from the port cask. Flavors of baked cherry tart, citrus marmalade, toffee and dusty cocoa are wrapped cozily with the smokiness of the peat which warms the senses with pipe tobacco, smoldering earth and crushed seashell notes. The finish is long and cascading with a full and satisfyingly round mouthfeel.

    Because of the intense tropical humidity and protection from the marine layer over the estate on Martinique in the Lesser Antilles, the sugarcane at Habitation Bellevue, the home of Rhum J.M., grows in a full 12 month cycle and is harvested each Spring. Because they harvest only their own sugarcane, the sugarcane is pressed in less than 1 hour from when it was cut, delivering the freshest possible juice to be made into rhum. The sugarcane juice naturally ferments slowly into a sugarcane wine (Vin de Canne) of around 5% abv over the course of 36-48 hours. The sugarcane wine is then distilled into Rhum Agricole in a Créole Copper Column at or near 70% alcohol, retaining the natural flavor and aroma of the Habitation's cane and terroir. The distillate is then rested in stainless steel tanks for at least three months, before being reduced to bottling strength and bottled.

    J.M Blanc 100 Proof displays the raw power of what is regarded as the best sugarcane on the island and speaks of mango, overripe bananas, and papaya. The higher proof retains more of the vibrant freshness for which rhum agricole is praised.

    Sweet nose with caramel and vanilla, slightly floral and fruity. Sweet yet slightly spicy from the rye, it has notes of brown sugar, maple syrup, rock candy and toffee. Spicy notes include clove and cinnamon. Well-balanced with roasted corn, toast and raisin. Sherry finishing adds flavors of walnut, fig and candied fruit. Finish is medium-long with notes of sweet caramel and butterscotch. 46.3% ABV.

    Hillrock Solera Aged Bourbon is the world's first solera aged bourbon. Solera aging is a process that has generally been reserved for aging cognacs, ports and sherries. It involves filling a series of casks at different intervals over a long period of time. As whiskey from the oldest cask is emptied and bottled, the cask is re-filled with an equivalent amount of whiskey from the second-oldest cask in the solera. This cascading effect continues until the youngest cask in the solera is filled with new whiskey. As a result, no cask in the solera is ever fully emptied. In addition, as the younger whiskey ages and cascades through the solera, its average age and complexity gradually increases over time.

    Hillrock Solera Aged Bourbon marries Hillrock Estate Bourbon with a mature seed bourbon that was carefully sourced by Pickerell. After cascading through the solera, Hillrock Solera Aged Bourbon is finished in 20 year old Oloroso Sherry casks. The finishing process balances the spicy rye flavors of the bourbon and adds further complexity, with layers of fig, roasted walnuts and candied fruit. The current age of Hillrock Solera Aged Bourbon is over six years and the rye content is approximately 37%.
