For nearly a decade, we have traded our freshly-emptied barrels with some of our brewing collaborators. They have in turn “seasoned” them with Stout before returning them. Stout Cask pushes the boundaries of flavor. It begins with Westward Whiskey Original and is then aged for one year in Stout casks.

Our distinct, rich, and bold whiskey is the pinnacle of American whiskey. Created from two-row malted barley grown and malted in the American Northwest, fermented with craft ale yeast for outstanding flavor, double pot distilled for exceptional character, and matured to perfection in new, heavily toasted, and lightly charred American Oak barrels right here in Oregon, where our unique hot, dry summers and cool, wet winters are the ideal environments to raise a world-class whiskey.

Latin for ‘one hundred herbs’, this type of bitter alpine liqueur was traditionally made by monks and consumed in the alps of France and Italy. French Chartreuse is another example. Botanicals are individually infused for 20-50 days, rested, blended with alpine water and beet sugar, and rested again.

The only Demeter certified Biodynamic® brandy in the US, this offering is a truly agricultural spirit. Fermented, distilled in a German copper still and aged on the premises by Gena Nonini, whose family has farmed here for generations, the Marian Farms brandy is one of our all-time favorites. We are lucky to sell this blend of casks between 7 and 13 years old. Many of the great whiskey drinks were also brandy drinks. Try it in your Manhattan. Try it in your old fashioned.

This curaçao contains only three ingredients, all farmed in accordance with Biodynamic ® practices: California orange peel, sugar and grape spirit. Its bright elegance will remind you why this ingredient dominated the pages of bar books for more than a century. Thanks to our sister Gena of Marian Farms who developed it with us.

Solstice is our California take on the classic aperitivo - it’s fresh, bright, and unlike anything else. We create an infusion of whole strawberries (with their green tops), grapefruit, and orange peels in grape brandy, then “wash” the fruit with wine to pull out every last bit of flavor. That is all mixed together in tanks, where we then do a quick infusion of dried hibiscus flowers, which deepen the red color and provide a beautiful floral and tart note. The resulting aperitif is bright and lifted, with a subtle bitter backbone that balances the sweetness.

This vermouth is infused with a blend of botanicals, including Castelvetrano olives, dill seed, rosemary, thyme, oregano, lemon peel, orange peel, and wild foraged kombu. These ingredients contribute to its savory and herbaceous profile, making it particularly suitable for Dirty Martinis.

Flor de Azar Triple Sec is a beautifully balanced orange liqueur from Mexico, crafted with the finest orange peels and distilled to perfection. With vibrant citrus aromas, hints of orange blossom, and a smooth, slightly sweet finish, it’s the perfect ingredient for classic cocktails like Margaritas, Sidecars, and Cosmopolitans or enjoyed on its own over ice. At 40% ABV, it delivers an authentic citrus character that enhances any drink, making it a must-have for home bartenders and cocktail aficionados alike.

Spritz Del COnte Classico is a blend of aromatic herbs and bubbly white wine with notes of orange, boasting a bright color and light, refreshing taste. Pick up a bottle to day spritz with ease or with your friends at brunch. Spritz Del Conte is ready to serve and easy to drink. 

Palenqueros Madrecuishe was produced in the village of Santa Maria La Pila at 1552 meters above sea level by fourth generation producer Don Valente Garcìa, alongside his grandson Semei, from cultivated Madrecuishe. Cooked in an oven pit and hand crushed with a wooden mallet, the agave is fermented in cypress and pine wood vats using the ambient yeast of the distillery before it is distilled on a 350 liter copper pot still powered by direct fire. Bottled at still strength of 48.9% with no additives.

Palenqueros is a project initiated by La Maison & Velier’s Luca Gargano and involves six producers from the state of Oaxaca, Mexico. The initial series of 12 certified mezcals in 2019 was a collaboration project with Tradición Chagoya, which owns and operates other mezcal brands like Donaji and Los Cuerudos. The second series, released in 2024, featured 6 agave distillates and was solely a project of LM&V.

Blanton's Black Label is an exclusive single-barrel bourbon originally bottled for the Japanese market, known for its refined character and longer aging compared to the standard Blanton's Original. Bottled at 80 proof (40% ABV), it offers a smoother, more approachable profile while retaining the complexity bourbon enthusiasts appreciate.

The nose presents delicate aromas of honey, vanilla, and floral notes, layered with hints of cherry and citrus zest. A Single Grain Irish Whiskey, originally distilled in County Cork, Ireland - with a mash bill of 95% French Maize (Corn) and 5% Irish Malted Barley in a twin-column Coffey Still. Matured first in Ex-Bourbon Barrels, and then finished for 6 months in casks that previously held the Award Winning "Mark X 2007" Barbados Rum from Foursquare Rum Distillery's Exceptional Cask Selections Line.

E.H. Taylor, Jr. Straight Rye Whiskey is a Bottled-in-Bond release made from a mash bill of rye and malted barley, with no corn, resulting in a whiskey that showcases rye’s bold, spicy character. Its rich mahogany hue reflects the careful aging process.

On the nose, it offers an inviting mix of toasted oak, rye spice, black pepper, mint, and subtle notes of pear.
