Our Winex exclusive cask was aged for 8 years, spending just over 7 years in ex-Buffalo Trace Bourbon barrels and then transferred into fresh Sandeman Ruby Port Casks for 6 months. At 55.9% ABV we recommend just a splash of water. The nose is complex and layered with cocoa powder, stewed cherries and biscuit peeking through the distinctive peat. The peat from Kilchoman has always stood out in my mind because it lacks any medicinal or burnt rubber qualities that turn many off to a peated scotch. On the palate it opens up with a hint of sweetness from the port cask. Flavors of baked cherry tart, citrus marmalade, toffee and dusty cocoa are wrapped cozily with the smokiness of the peat which warms the senses with pipe tobacco, smoldering earth and crushed seashell notes. The finish is long and cascading with a full and satisfyingly round mouthfeel.

One of the world's most popular blends, and the best-selling Scotch whisky in Scotland. Famous Grouse is a very nicely balanced, malty blend which was first made in 1896, and would go on to be known as The Famous Grouse, with the name registered in 1905. Around eighty years later, the company was awarded a Royal Warrant. The blend represents great value for money, and it also works beautiful in whisky-based cocktails. Delicious.

Sweet nose with caramel and vanilla, slightly floral and fruity. Sweet yet slightly spicy from the rye, it has notes of brown sugar, maple syrup, rock candy and toffee. Spicy notes include clove and cinnamon. Well-balanced with roasted corn, toast and raisin. Sherry finishing adds flavors of walnut, fig and candied fruit. Finish is medium-long with notes of sweet caramel and butterscotch. 46.3% ABV.

Hillrock Solera Aged Bourbon is the world's first solera aged bourbon. Solera aging is a process that has generally been reserved for aging cognacs, ports and sherries. It involves filling a series of casks at different intervals over a long period of time. As whiskey from the oldest cask is emptied and bottled, the cask is re-filled with an equivalent amount of whiskey from the second-oldest cask in the solera. This cascading effect continues until the youngest cask in the solera is filled with new whiskey. As a result, no cask in the solera is ever fully emptied. In addition, as the younger whiskey ages and cascades through the solera, its average age and complexity gradually increases over time.

Hillrock Solera Aged Bourbon marries Hillrock Estate Bourbon with a mature seed bourbon that was carefully sourced by Pickerell. After cascading through the solera, Hillrock Solera Aged Bourbon is finished in 20 year old Oloroso Sherry casks. The finishing process balances the spicy rye flavors of the bourbon and adds further complexity, with layers of fig, roasted walnuts and candied fruit. The current age of Hillrock Solera Aged Bourbon is over six years and the rye content is approximately 37%.

Whiskey Del Bac Classic kicked off our journey into American Single Malt. Classic is a riff on the Scottish model of whisky-making, but made in a desert climate and aged in American oak. It is handcrafted from 100% barley malt that is mashed, fermented, copper pot distilled, aged in the American Southwest, and bottled on-site. It's never chill-filtered.

The Small Batch is 1792’s flagship offering. It is a high rye bourbon, which means that the composition of the grain is a high percentage of rye in relation to the corn that leads the bill. The mash bill itself is 75% corn, 15% rye and 10% malted barley -- using rye as the second most sizeable grain makes for a bolder, spicier bourbon. But even with a high rye component and such bold spice, the 1792 retains a masterful elegance.

Full-flavoured, rich. Initially, concentrated iris notes hint at the extreme intensity of the nose. It then develops aromas of malted barley, exotic fruit (banana), liquorice and camphor. Notes of burnt wood and ash progressively settle over the aromatic palette. Long after, white flowers and beeswax make an appearance.Firm, lively. Malted barley is at the heart of the palate, coated in herbaceous, liquorice, spiced (ginger, cinnamon) and chocolate tones. Very elegant, the mid-palate also delivers plenty of energy and as it draws to a close, fresh tobacco leaves and coconut intertwine to create a natural symphony of aromas.Long, soft. It evokes the scent of wilted roses. Fine tannins balance its tangy character (lemon, grapefruit). It lingers on notes of tobacco, spices (cardamom, ginger), toasted nuts and stewed fruits (apple, damson). The final nose reveals exotic notes (lychee).

This no-age-statement version was released in 2016 as a permanent product that showcases the elegant style of Miyagikyo malts, when all age-statements were discontinued. This bottling has estery aromas generated by carefully selected yeast strains along with distinctive Sherry cask influence.

From the Producer: Designed to be an approachable, sipping whisky, Akashi Whisky has a malty, citrusy characteristic complemented by hints of salinity due to its coastal location. This whisky is distilled from wheat, barley and rye with notes of subtle peat, aged in ex-bourbon, barley shochu, and sherry barrels. Flavors of vanilla and pine nuts delight on the palate, leading to a long, wheaty finish. An excellent introduction to the Japanese whisky category, for those looking for a segue into Scotch, or an everyday drinking dram. TASTING NOTES The nose is slightly fruity with hints of lemon, cherry, toffee, oats and sea air. The palate is perfectly clean & easy with a touch of peat on the finish.
