From the Distillery:

We use only three ingredients to craft Copalli Premium White Rum: Fresh pressed juice from locally grown, organic sugar cane, plus yeast and rainwater. Our Copal Tree Distillery is designed to be zero waste, and we proudly craft a rum free of added flavors, colors, or additives. The sugar cane juice is distilled in our column and pot stills and blended to create a unique premium white rum that is delicious served neat, on the rocks, or in cocktails.

This bottle of Asia Pacific Extra Old (XO) Rum was distilled at The South Pacific Distillery in Fiji and in Java, Indonesia, aged in White Oak barrels and traditional Djati wooden vats. This expression celebrates the true essence of its terroir with a bold and tropical Fijian pot-still character, balanced with the zest and depth of Indonesian column still smoothness, enhanced by unique teak vat ageing. Bottled only at the very peak of maturity, for a bold, fresh, and exotic flavour experience for the sophisticated palate. Slightly dry, with tropical fruit on the nose, leading to a sweet vanilla and baked banana aroma, moving to oak then a darker hint of warm teak finally develops into a rich manuka honey finish.

This bottle of French Overseas Extra Old (XO) Rum was distilled from Agricole at the Riviére du Mât distillery in Reunion and at the Le Galion distillery in Martinique, before being aged in both American and French White Oak barrels, for a big, bold finish. This expression celebrates the true essence of its terroir, and is bottled only at the very peak of its maturity, for a rich, floral but fruity taste experience for the discriminating palate. On the nose you will find cane sugar and cinnamon evolving into sweet crème caramel. Upon tasting you discover raisins and liquorice followed by tasty tropical fruits. The perfect blend of agricole and molasses rums.

Aging mellows a spirit. It also brings out new flavors and aromas. Our Gran Reserva contains rums aged between 9 and 12 years, and Solera rums aged up to 50 years, creating a balance between sweet and dry that you won’t get in other spirits. Demerara MDV 2012 #15213

In November 2012, this rum was distilled in the Diamond Distillery's historic, single-wooden pot still and put in used bourbon and whiskey barrels. This still was originally employed at the Versailles Distillery in the 17th century before being moved to the Diamond Distillery where it continues to produce iconic rums.
