The NV Sibarita Oloroso VORS is produced with Palomino grapes, balanced with 2% of Pedro Ximenez, something quite common to polish the edges of very old wines, in a solera created in 1792. It has a dark mahogany color, and the nose shows some toffee notes intermixed with roasted coffee, tar, ash and incense. The palate shows good depth, strong acidity, well compensated by the sweetness, and a slightly bitter finish. Intensely aromatic, with a nose full of balsamic notes (rosemary, thyme) intermixed with some smoke, spices, noble woods and hazelnuts. The intense, complex and complete palate shows great elegance and finesse, with a bitter orange and saline finish that makes it very tasty. Extremely long. Only 600 bottles are filled each year.     93 Points!  There are two yearly bottlings of the NV Fino Viejo Tradición, one in the spring and another one in the autumn, sometimes marked with the month and sometimes with the season. This one specified Primavera 2016 (spring 2016) must have been recently bottled (or even just before bottling). I had three different bottlings to taste side by side, which is really interesting, as these wines, like all, develop in bottle contrary to what it was said before - that they spoiled in bottle and had to be drunk ASAP. This is the freshest of the three, and the flor is still there, very tender, with more citric aromas and notes reminiscent of the fresh yeasts - the 'flor'. The difference between 'sacas' are always subtle, and at the end of the day the differences between wines is also very much marked by how long ago the wine was bottled. So I decided to go back to grouping the different bottlings under one same wine and just specify the lot/saca/bottling date in the tasting note. This recent one reminded me a lot of the other when tasted young, with a character of an old, traditional fino; not shy of showing a dark golden color or an expressive, slightly oxidative nose with plenty of influence of the yeasts, under which it has been for ten to 12 years. The character has the holy trinity of fino, chalk, esparto grass and brine. This has become one of the most consistent and best old Finos around.     95 Points!  The single vintage wines are different, but they are not necessarily better than the solera wines. In fact I preferred the Oloroso VORS to the two single-vintage; I found it more complex and fluid, while the single vintages were more concentrated and powerful, but not as nuanced. I’m talking about the NV Tradicion Oloroso VORS, on average 45-50 years old, which gives the wine a concentration of glycerin and dry extract that is amazing. Silky, very interesting to see the wine that has been blended over the years is more complex. The proverbial iron fist in a velvet glove, it is full-bodied, and still follows the same, clean, elegant, precise line of the rest of the wines from Tradicion.     94 Points!  The NV Palo Cortado Tradicion VORS, averages 32 years of age, which they consider the correct age for Palo Cortado, so it is not just an old Sherry. Light amber-colored, the nose has a sweet sensation, apricots, and almonds but then the mouth is very dry and saline, fine and light, with flavors of hazelnut, a little varnish, very elegant, intense, pungent, a little spirity. It has a delineated palate, superb intensity, and very long finish. Classical, elegant, clean, intense and delicate could be common deors for all their wines. A textbook Palo Cortado.
