    Winery notes: A combination of different chalky-clayey soils (2/3 Marly soils and 1/3 Pebbly limestone). The vines are planted on steep slopes, that's why in most cases, the work to be done in the vineyards is very difficult. After hand-picking and sorting the grapes in the vineyards, they are transferred to the cellar with great care in order to avoid bruising the skins. The pneumatic pressing and cold settling lasting from 12 to 24 hours take place before the natural fermentation in thermo-regulated tanks.     Importer notes: Charming and ethereal, this mineral bomb is grown by one of Emmanuelle’s winery partners who works closely with her brother, Alphonse Mellot (Jr). The grower employs Mellot’s complete direction in organic methods and treatments but does not carry organic certification. It’s a blend of different sites with a bedrock constitution of approximately 50% chert (flint/silex), 25% on Kimmeridgian limestone marl (a stone composed of lithified miniature oyster-like fossils mixed with clay, sand or silt) and 25% “plaquettes de Villiers” (a very soft limestone) and clay topsoil with a lot of stones. The plaquettes are very well drained limestone bedrock (not always a specific quality of all limestone), which encourages earlier maturation of the grapes when compared to the chert and limestone marl soils. Vinification: Luckily for everyone, the grapes are vinified and aged in the Mellot family winery by Alphonse, a master technician of wine crafting. To avoid oxidation and reduce the level of added sulfites, the hand harvested grapes are pressed in an inert gas pneumatic press.     Importer notes: Cyril produces a separate cuvee from the estate’s oldest and best-exposed vines closest to the chateau itself. As of 2016, the vines for the “Chateau du Nozay” are 45 years old, and while the wine possesses the same almost Chablis-like carriage as the “Domaine” bottling above, the intensity and depth are noticeably ratcheted up here. While it’s still lean and punchy, the vines’ diet of more sun and deeper subsoils reveals itself in a glimmer of glycerol succulence on the mid-palate and a rounder, longer finish. A certain density that still avoids any sense of heaviness suggests the possibility of interesting cellar development, and for those inclined to allow the Sauvignon’s youthful exuberance to subside and let the limestone shine through, this will prove a very rewarding purchase.     Importer notes: Nicolas Chevreau has created a cuvée, Terres Blanches, from two parcels—Epsailles and Cote de Reigny (sometimes shown as Derriere Reigny on maps), both very steep slopes. The soil in each is Terres Blanches or marneaux lime/clay. Part of the parcel in Reigny is very old vines (over 60 years). There is no fining and only one light filtration over white clay.     From basically the center of France, this old vines cuvee of Gamay Saint-Romain (slightly different than the Gamay in Beaujolais), was planted 80 years ago and is now farmed with organic and biodynamic methods on a terroir of clay and granite soils. A 1.7-hectare walled vineyard, situated at an altitude of 515 meters, facing east. Ploughing, natural grass cover crops, debudding, leaf thinning as well as harvesting by hand are all practiced at this estate, located at the foot of the Massif Central. Vinification: 75% de-stemmed, maceration for 18 days, some punching down of the cap, and maturation in 1-to-5-year-old, 500-litre barrels for 11 months.
