Trained in Bordeaux, Burgundy, and Australia before mastering the Loire, Thibaud farms a scant 5 acres organically, including Chenin adjacent to Nicolas Joly's famed Coulée de Serrant. His Rosé began as a favor to his California importer and has become a cult classic. Sourced primarily from old-vine Cabernet Franc around Anjou, native yeast fermented, and aged 4-6 months in stainless steel, the 2025 delivers the varietal intensity and terroir of a fine red Chinon in pink form: minerally, savory, and saline, with a juicy punch of watermelon-inflected fruit that keeps you coming back. At $23.98, it's world-class Rosé for half what a comparable (or lesser) Provence bottling would cost.

    Who needs Sancerre when you have Quincy? This is a blend of several plots of Sauvignon on alluvial sand and gravel atop clay-limestone subsoil wiht an average vine age of 45 years. Harvested slightly overripe to seek ripe fruit and richness on the palette. Pneumatic pressing, undergoes a cold pre-fermentation maceration in temperature-controlled inox , as means to search for a balance between freshness and fruitiness according to the vintage. The wines are then racked onto their fine lees and aged for a few more months. Aging 6 months.
