    Now for something completely different. You won’t find many rosés made like this, in the Beaujolais or anywhere else. It is fermented with ambient yeasts, completes malolactic, and is bottled only when the wine is deemed 'ready'. Thivin makes it like any other serious wine of and allows it to run its natural course rather than manipulating it to "some 'designer' specs and rushing it into bottle. The result is a sleek, nervy, mineral-laced, suave rosé that expresses the nuances of where it comes from...granite soils outside the cru of Brouilly. From a one-hectare parcel of 50-year-old vines in sand and pink granite, there's succulent flesh and a mouthwatering finish punctuated by a pleasant salinity, but the insistent minerality is a definite stylistic distinction.     The vineyard of "Haut de Chavannes" is high up on the slopes of the dormant volcano Mont Brouilly. The excellent exposure, old vines and signature rocky, blue granite of the Cote de Brouilly appellation gives the wine both concentration and finesse. Hand-picked, placed in a vat as whole clusters and fermented 21 days by native yeasts, using only carbon dioxide to guard freshness.     Foillard's just-released 2017 Morgon Côte du Py is a great success, unwinding in the glass with aromas of red fruit compote and cherries that are complemented with aeration by beautiful top notes of rose petal, blood orange and violets. On the palate, it's medium to full-bodied, with a generous core of ripe but succulent fruit, tangy acids and powdery structuring tannins that assert themselves gently on the long, sapid finish.
