This cuvée is made of a selection of the best terroirs from Pinet, Pomerols and Florensac totaling aproximately 45 acres of clay limstone soils.

The vineyards overlook the Thau Lagoon, the largest oyster pond in the Mediterrean sea. The sea and lagoon provide an ideal climate to fully develop the aromas of Picpoul by decreasing temperature variances between day and night.

Aged 4 months aged on its lies in stainless steel tank

Organic and sustainably farmed grapes hand harvested from Beato Vineyard (60%) and Derby Vineyard (40%), 100% whole cluster carbonic fermentation with native yeast. Left on the skins for 14 days. Bottled with minimal SO2 added. Unfined and Unfiltered.
