This comes mostly from vines on the plateau between Fleys and Chichée to the southwest (the 1er cru Vaucoupin is on the other side of this plateau). From vines high on the east-facing slope of the river bank. Vines average 40 years of age. Haute Valeur Environnementale certified. Fermentation is begun with a neutral yeast starter (this is true for all of Fleys' wines), and this cuvée is made and raised entirely in steel. The domaine’s best Villages level Chardonnay. They keep only the finest one-third of their production to age and bottle; two-thirds is sold off to négociants.
