From the winery: I selected clone 548 Chardonnay from Peake Ranch for its tendency towards focused citrus flavors and distinctive minerality. After hand picking at night, the fruit was gently pressed as whole clusters, the juice was settled overnight, then transferred to barrels for a native fermentation. The slow conversion of grape sugars gives complexity and increased mouthfeel. A lengthy primary and secondary ferment was encouraged by occasional stirring of the yeast lees. Like an “old world” Chardonnay from an esteemed vineyard, this wine hid its true qualities for months in the barrel. Allowing the wine to develop gradually before bottling in the spring, after the next vintage, let this late bloomer shine.

100 Points! The Grand Vin 2022 Château Margaux checks in as 92% Cabernet Sauvignon, 6% Merlot, and 2% Cabernet Franc that's pulled from just 40% of the total production. Brought up in new barrels, it has a terrific pH of 3.61, which is low for the vintage, and an alcohol of 14.3%, with the highest level of tannins since 2010. It brings another level of purity, elegance, and finesse, and it is just a sensational, legendary Margaux in the making. Crème de cassis blue fruits, spring flowers, lead pencil, and violets all define the bouquet, and it's full-bodied on the palate, with a layered, seamlessly textured, flawlessly balanced profile. While it shows the ripe, pure, already accessible style of the vintage, I wouldn't be surprised to see this close down over the coming 7-8 years, given its density and structure, and it's not going to hit its prime drinking window until 15-20 years after the vintage. As usual, the Grand Vin demands more time to unfold on the nose compared to the Pavillon. It unveils enticing scents of macerated black cherries, blueberry, violet and hints of orange blossom all delivered with impressive delineation. The palate is medium-bodied with sculpted tannins. A fine-boned and tensile Chateau Margaux that is quite a remarkable feat given the growing season. Silky smooth and almost creamy at first, toward the finish it reveals a slightly powdery texture, almost swaggering in style. It has an almost clinical bouquet, with very well defined blackberry and blueberry fruit, graphite and crushed stone. Quite a gap in quality between this and the Fiefs de Lagrange this year. The palate is extremely pure with cashmere tannins, black cherry fruit infused by blood orange, lightly spiced, hints of white pepper toward a very concentrated, fine-boned finish. We borrowed and twisted many of these techniques to produce Doc’s Alter Ego Bourbon. Our goal was to take good whiskies, blend them together and see how we could enhance these blends as well as maintain the flavor of the whiskey itself. After years of finishing whiskies in a variety of casks, we believe we have struck success using Olorosso Sherry, Pedro Ximenez Sherry, and Cognac casks from a number of curated producers.

Whether accentuating or layering in characteristics, we believe these techniques enhance the spirit and still focuses on the bourbon. These casks allow the delicate characteristics of past occupants to mingle and marry with the smooth yet bold aspects of Doc’s Straight Bourbons. Each release is then meticulously blended and married in ex-Cognac Foeders prior to bottling. Our finishing and blending techniques impart a dry nuttiness, subtle sweetness, and an extended finish to an already great whiskey, while still allowing the bourbon to shine.
