An amaro made mostly from more than twenty locally grown herbs, roots and flowers, including gentian, artemisia (genepy), and mint, with the addition of bitter botanicals like rhubarb root. The alpine herbs are picked in August, then dried, then infused in pure alcohol together with the other botanicals for about a month. Les Lavières is situated east of the village of Savigny-lès-Beaune right in the middle of the hillside. The vines, from Michel's mother's side, came to the estate in the 1940s after the marriage of his parents.

Grapes were mostly de-stemmed and fermented in cement tank with native yeast. Following fermentation, the wine was transferred to barrels for malolactic fermentation and aging about 10 months in oak pièces (10-25% new barrels).

Distillers can be very protective of their hard-won malts, especially those who carry the most prestigious of names. From time to time, they must relinquish the hold on their casks, when one is sold to an independent bottler, for instance. Before spirit changes hands, the distiller - green-eyed and flush with passion - will take a single teaspoon of another distillery’s single malt, and add it to the spirit in the cask. Just a dash it takes, but that whisky can no longer bear the name its distillery of birth.

The distillery of origin is a darling of Dufftown, where nine stout stills produce a spirit rich in fruit and notably honeyed. Her sister, nestled close by in the Moray countryside, is where the ‘teaspoon’ of malt originated. Though nameless, together they are a powerful and stunning pair.

Independent bottlings of spirit distilled at the Balvenie distillery are rarely found on the market, and though the distillery is notable for having experimented with different cask types, this ex-bourbon cask allows the distillery character to sing finely and clearly, while accentuating the sweet vanilla and stone fruit character.

It's elegant and fine and still powerful, thanks to the Bannockburn area; however, the wine itself shows rose petals and spring flowers, graphite and pencil lead, white pepper and tapenade. The vines were planted on high elevation plots in Saint-Aubin in the 1980s. There are two soils types: One on white clay-limestone soil, and the other on a thin layer of red soil on lava, which gives all the complexity to this wine according to Fornerot.

After being handpicked, the harvest is lightly crushed then pressed in a pneumatic press. The juice is then allowed to settle and placed by gravity in French oak barrels to ferment with indigenous yeasts. After aging in barrels for 10 months, the wine is placed in vat for a month and is bottled at the estate.

Nearly half of the fruit was fermented as whole clusters, with just over half de-stemmed into small open-top fermenters. Who needs Sancerre when you have Quincy? This is a blend of several plots of Sauvignon on alluvial sand and gravel atop clay-limestone subsoil wiht an average vine age of 45 years. Harvested slightly overripe to seek ripe fruit and richness on the palette.
