Sage, mint, white pepper, crushed rocks, mint and dried herbs give the 2021 its intensely floral/savory/mineral style. 95 Points! Tasted with Lisa and Philip Togni in their winery atop Spring Mountain in February of 2024. The Tanbark Hill was bottled in June of 2023. 100% Cabernet Sauvignon, aged up to 20 months. The tannins are quite assertive at this young stage, in classic Spring Mountain Togni fashion, with a fine granularity about them. The wine feels quite complete, teeming with pure dark berry fruits and very fresh. Deeply mineral-tinged dark berries and black currants are framed by a wine with noticeable coiled-up energy and tension. The medium to full-bodied 2021 Cabernet Sauvignon Tanbark Hill Vineyard delivers complex notes of mountain fruit, with hints of sage and bay leaf accenting cassis, blueberries and raspberries. In the mouth, it's firmly buttressed by grainy tannins, with terrific acids that linger on the finish in mouthwatering fashion. 93 Points! The 2021 Cabernet Sauvignon Tanbark Hill Vineyard is one of the most potent vintages of this wine I can remember tasting. Dense and textured, the 2021 shows ample dark fruit and complex earthy/savory undertones that add balance. The 2021 benefits from the addition of some excess fruit that would have been used in the main label but that, for practical purposes, ended up in the tanks for the Tanbark Hill. 93 Points! Readers looking for more immediate gratification should seek out the seductive, sexy 2003 The Maiden. It offers lots of cedarwood, white chocolate, black currant and damp forest notes in a medium to full-bodied, round, generous style with all the oak absorbed. The acidity provides good vibrancy, but no tartness, and the tannins are not astringent. This spicy, open-knit, fleshy 2003 is showing extremely well at present. From the winery: Our Central Coast Chardonnay is sourced from notable vineyards in the Sta. Rita Hills of Santa Barbara County and the SLO Coast of San Luis Obispo County. Of particular note are the Spanish Springs and Norgrove Gardens Vineyards, both just over two miles from the ocean. These sites provide vibrancy and marine freshness that benefit from the textural boost of Sta. Rita Hills Chardonnay to create a balanced, delicious wine.

Wine-growing Burgundy occupies a continental, northerly position in France. This geographical location gives nature a great deal of power, imposing its law on mankind! Such was the case in 2021, when many parts of Burgundy were hit by spring frosts, considerably reducing the number of grapes harvested in September. Cellars and barrels were virtually empty over the winter. Normally, it would have been easy to buy Chardonnay juice in southern Burgundy to fill the empty barrels and sell the resulting wines in bulk the following spring. The integrity of the barrels was thus preserved.

Unfortunately, spring frosts made this impossible.  So another solution had to be found! One of the producer's partners referred him to a winegrower friend in the Alpilles vineyards. The ancient vineyards of the Alpilles are a block of limestone located between the Rhône Valley and Provence. Les Opies is the massif's highest point at 496 meters altitude. Summers are dry, with little rain and regular sunshine. The vineyards are under the continental influence of the Rhône Valley and the protective influence of the Mediterranean. 

This wine is a sort of “introduction” to the Côte de Beaune appellations produced by the domaine.  The meeting between the two winemakers is fruitful. The Burgundian is won over by this beautiful limestone terroir situated at an altitude of 400 meters. The Provencal hands over his Chardonnay grapes, which are cultivated and harvested according to the Burgundian's instructions, particularly with regard to fine management of the harvest date, in order to preserve a balance between freshness and ripeness. Vinification and ageing are carried out in Burgundy, in the same spirit as the domaine's other wines. 

The results of this technical and human adventure have far surpassed the simple objectives set at the outset in 2021. Today, this Chardonnay, produced in the Alpilles but vinified and matured in Burgundy, has a very singular character, much more akin to a white wine typical of Burgundy than a white wine typical of Provence. It's a singular Chardonnay wine!

Les Déserts is steep, sun-drecnhed vineyard overlooking Bué that borders Chavignol. This cuvée is a selection of about one third of the one-hectare holding— vines were planted in the 1990s on clay-limestone, "Terres Blanches" from the Kimmeridgian geological stage, rich in fossilized seashells. Manual harvest with strict sorting of clusters or parts of clusters altered or insufficiently ripe, 20% is vinified in medium-aged oak barrels of a wine, 80% is vinified in vats at a low temperature, indigenous yeasts and the lees are suspended regularly to feed the wine until spring. Bottling takes place in late-spring after a light filtration.

95 Points! The 2021 Chardonnay Sta. Rita Hills offers a richer, nicely oaked profile that includes honeyed stone fruits, toasted spice, crushed stone, and salted citrus-like nuances. It's rich, medium to full-bodied, and has a concentrated, mouth-filling profile that's grounded by a beautiful spine of vibrant acidity. It benefits from air, and this is another awesome Chardonnay from this team that readers will absolutely love. - Jeb Dunnuck

97 Points! A hidden gem of a wine that doesn't get the recognition it deserves, the 2022 Château Couhins Blanc is 93% Sauvignon Blanc and 7% Sauvignon Gris brought up in 18% new barrels, with the balance in used oak and tank. Bright citrus, honeyed lime, mint, sappy flowers, and chalky minerality all define the aromatics, and it's medium to full-bodied and concentrated on the palate, with gorgeously clean acidity and a great finish. Savvy readers should snatch up this ripe, voluptuous, sensationally layered, textured, complex white. It's always hard to predict how these concentrated dry whites will age, yet this should benefit from 2-3 years of bottle age, and I wouldn't be surprised to see it still drinking beautifully at age 20. - Jeb Dunnuck
