It's the evolution of the wine he used to call Mercenario and comes from selected vineyards in different locations and soils and a myriad of varieties—Treixadura, Albariño, Godello, Loureira, Torrontés, Lado, Branco Lexítimo and Verdello Antigo—picked when they were still crunchy.
