99 Points! The 2018 Pavie is a blend of 60% Merlot, 22% Cabernet Franc and 18% Cabernet Sauvignon. The wine has a 3.58 pH and 14.48% alcohol. Very deep garnet-purple in color, it bursts from the glass with a fabulously expressive nose of crème de cassis, baked plums and blueberry preserves, leading to an impressive array of nuances, featuring notions of dark chocolate, camphor, licorice, rose petals and fertile loam, plus hints of crushed rocks and iron ore. The rich, full-bodied palate offers layer upon layer of opulent black and blue fruits with loads of exotic spice sparks and pretty floral and mineral accents, supported by firm, super plush tannins and remarkable tension, finishing with epic length and depth. This could only be Pavie. $24.98From the importer: “Pipinot” is Lara and Mattia’s flagship wine, produced from four vineyards around Lauzacco of dolomitic limestone origin with soils varying in proportions of loamy clay, gravel, and sand. In homage to the traditional ramato style of vinification wherein Pinot Grigio’s notable pink skins contribute color and texture, the 2023 “Pipinot” macerated for 30 hours before fermenting via indigenous yeasts in the pied de cuve method, aging for eight months in a combination of equal parts stainless-steel tank and 20-hectoliter Slavonian oak botti before being bottled without filtration. Pouring a lovely light gold with glimmers of pink, this texturally layered wine offers notes of melon rind, white cherries, and licorice on a generous but focused frame, with notable but non-intrusive grip and persistence. A completely different nose to Les Hauts de Smith, which has all that lightly roasted Merlot fruit;this has the same intensity but now in a pure, perfumed, floral Cabernet style, touched with mint and white peach. This continues through into the palate, now joined by darker tones of liquorice, toast, tar and charcoal, with a very pure and finely knit together backbone of tannins. A remarkable wine bearing in mind it is a second label, with dark fruit, high-quality structure and great length. This is a delicious Pessac-Léognan with fine potential. Give it ten years at least. Rhum JM Agricole Blanc
Special Price $27.18 Regular Price $31.98Out of StockBecause of the intense tropical humidity and protection from the marine layer over the estate on Martinique in the Lesser Antilles, the sugarcane at Habitation Bellevue, the home of Rhum J.M., grows in a full 12 month cycle and is harvested each Spring. Because they harvest only their own sugarcane, the sugarcane is pressed in less than 1 hour from when it was cut, delivering the freshest possible juice to be made into rhum. The sugarcane juice naturally ferments slowly into a sugarcane wine (Vin de Canne) of around 5% abv over the course of 36-48 hours. The sugarcane wine is then distilled into Rhum Agricole in a Créole Copper Column at or near 70% alcohol, retaining the natural flavor and aroma of the Habitation's cane and terroir. The distillate is then rested in stainless steel tanks for at least three months, before being reduced to bottling strength and bottled.
J.M Blanc 100 Proof displays the raw power of what is regarded as the best sugarcane on the island and speaks of mango, overripe bananas, and papaya. The higher proof retains more of the vibrant freshness for which rhum agricole is praised.

Palomino grapes from Pago Balbaína Baja near Jerez (albariza tosca cerrada soils), with grapes from Pago Maína, near Sanlúcar, (albariza barajuelas soil). Rafa says that the tosca cerrada albrariza lends the blend balance and fitness, while the barrajuela albariza lends a dry minerality and herbal salinity. Each wine Rafa produces is a unique snapshot of a place, time, and soil type in his vineyards in the Jerez region. As a result, production of these authentic treasures is in the hundreds of bottles, and they are exceptionally limited, coming to the US market in tiny allocations.
Hand-harvested palomino grapes (from 40+ year-old vines) are de-stemmed and pressed, followed by spontaneous fermentation with native yeasts from the vineyard without temperature control in a 500L ex-Manzanilla cask. After fermentation, it rests for nine months on its fine lees with bâtonnage in the same barrels before being racked into a stainless steel tank to settle before bottling unfined, with only a light paper filtration and minimal additional sulfur used before bottling.

They use field extracted wild yeast in their ferment, creating a layered flavor and really underlining the terroir of their land. Next up, it sees 4 months in third-fill American Bourbon barrels. You will notice the color of this repo is a shade of very light straw, due to the short period of time it spends in those third-fill barrels which are purposely chosen to be more neutral, adding a gentle wood influence. On the nose the undeniable presence of cooked agave is right up front with spice and a hint of anise intertwined with the brightness of lime and grapefruit zest. Warmth and a touch of sweetness envelopes the palate as the agave takes center stage with just enough influence from the barrel. Spiced shortbread and citrus round out the mid-palate and the finish leaves you a bit of salinity and chili heat. While writing these very notes I pour myself another finger, never regretting that its before 5pm.
