Darker in its ruby color, the 2019 Laurasie is a pure Cabernet Sauvignon from almost 20-year-old vines on the stony Jurassic plateau of Fosse-Sèche, where yields are not bigger than 20 hectoliters per hectare. This is fleshy and concentrated yet pure, fresh and elegant on the deep, terroir-driven and beautifully floral (violets) as well as graphitic nose that is absolutely distinctive in its delicate, pure and balanced style. Black and blue berries, dark cherries, green paprika, pencil lead and herbal, wet gravelly notes lead to a medium to full-bodied, highly elegant, refined and perfectly balanced palate that exhibits perfectly ripe, round and juicy fruit with a firm but ripe, very fine and elegant tannin/acidity complex. The finish of this concentrated red is tight, intense and spicy, showing black berry and chocolate as well as graphite and coal with dark cherry notes. Mulled black cherries, roasted garrigue, spice, and hints of fresh cut flowers and rose define the 2023 Châteauneuf Du Pape Les Quartz, which is based on 80% Grenache and 20% Syrah from 50% galets roulés and 50% sandy Safre soils in les Cassanets lieu-dit, fully destemmed and aged in 80% demi-muids and 20% neutral barrels. It's medium to full-bodied and elegant, with ultra-fine tannins, a seamless, layered, elegant mouthfeel, and fine tannins. The classic red of the domaine accounts for approximately 85% of the annual production of the estate.  It is composed of 65% Grenache Noir, 15% Syrah, 15% Mourvèdre and a balance of other traditional varieties. The grapes are not destemmed, the cuvaison lasts for three weeks and the élevage encompasses an additional 18 months in traditional foudre wood vats before the wine is bottled unfiltered. The fruit is perfectly in balance with the textural elements, showing typical dark fruit notes with discernible energy and liveliness. Its slighty sauvage character and firm structural backbone is leavened by its exceptional breed.

“Deep purple-hued, the 2025 Château La Dominique is a reserved yet clearly promising Saint-Emilion based on 85% Merlot and 15% Cabernet Franc, raised in 50% new barrels, 35% once-used barrels, and 15% amphora. Ripe black fruits, smoky tobacco, gravelly earth, and graphite all define the nose, and on the palate, it's rich and medium to full-bodied, with ample mid-palate volume, ripe tannins, and a great finish. It checks in at 13.6% alcohol with a pH of 3.68 and is very much on the focused, dense, concentrated side of the vintage.”

93 Points! Ripe stone fruits, chamomile, toast, and a beautiful sense of crushed stone-like minerality all emerge from the 2023 Châteauneuf Du Pape Blanc, a vibrant, medium-bodied white from this estate that has integrated acidity, terrific balance, and outstanding length. It has a kiss of almost Burgundian-like reduction right on opening, and this classy white is going to drink nicely for a solid decade, if not longer. Give it a year if you can. The blend is 30% Grenache Blanc, 30% Clairette, 25% Roussanne, and 15% Bourboulenc, and it was brought up in a combination of stainless steel, concrete, and old and new barrels. - Jeb Dunnuck

96 Points! The estate lost some Grenache due to shatter, so the 2023 Châteauneuf Du Pape is based on 40% Mourvèdre, 30% Grenache, 10% Counoise, 10% Syrah, and the rest a mix of permitted varieties. It was all destemmed except for the Syrah and brought up in foudre. The higher Mourvèdre component gives it a more serious, focused style than most in the vintage, and it has darker blackberry fruits intermixed with roasted herbs, spring flowers, violets, and some meaty nuances on the nose. Medium to full-bodied on the palate, with a deep, pure, layered mouthfeel, it has ripe, velvety, yet building tannins and a great finish. Another beautiful vintage for this cuvée, it has the approachable style of the vintage yet brings more than enough density and concentration to evolve for 30 years. - Jeb Dunnuck

This Junmai sake from Banshu Ikkon is a beautifully lean structured sake, light bodied and linear, with the distinctive bright and spicy finish unique to brewmaster Yuichi Tsubosaka. While Kita Nishiki is a rice developed locally in Hyogo it is more characteristic of rice grown in the far north, with a firm grain that dissolves more slowly, producing sake of tight structure and clean flavors as opposed to the luscious rice types that made the area famous. It does retain a brightness of character unique to the region, and typical of all Banshu Ikkon sake.

Rita Hills, a clean, vibrant, focused Chardonnay that has solid acidity, beautiful overall balance and texture, and a great finish. The estate comes all from the Melville Vineyard and was raised in neutral oak, hitting 13% alcohol with a pH of 3.27. - Jeb Dunnuck

Dark red-ruby. The brooding, medicinal scents of black cherry and licorice suggest an extremely concentrated wine. At once sweeter and even more tannic than the Echézeaux, conveying a powerful impression of extract but also uncanny cut to its dark fruit and saline mineral flavors. Finishes with explosive length. The impression of chewiness and solidity verges on extreme, and this wine is likely to need a minimum of a decade of bottle aging. 95 Points! Deep, bright red. Knockout vibrant nose combines purple and red berries, crushed stone, violet and animal fur. Lush, thick and deep but with terrific chalky energy animating the middle palate. Conveys striking depth to its red fruit and floral flavors, with the 45% new oak practically invisible today. Finishes with huge but round, noble tannins and outstanding lingering sweetness. 91 Points! A very restrained, indeed grudging, nose faintly reveals its combination of mineral reduction and citrus scents. The super-sleek and borderline painfully intense middleweight flavors are like rolling tiny pebbles around the mouth while the cuts-like-a-knife bone-dry finish is markedly austere. The mid-palate density is most impressive as the single digit yields are noticeable. 92 Points! The white 2019 Le Domaine is mostly Sauvignon Blanc, with 30% Verdejo, and comes from a warm year (not as warm as 2017) when Sauvignon Blanc achieved perfect ripeness. The wine has good ripeness, 13.5% alcohol, very good freshness, a subtle nose that is not that varietal (as it's often the case) and a soft palate with great balance and purity. 95 Points! The single-vineyard Garnacha 2020 Os Cantals, whose name denotes a soil covered in slate, comes from a dry-farmed and head-pruned 70-year-old vineyard on red, iron-rich soils. It fermented in open-top oak barrels with indigenous yeasts and full clusters that were foot trodden, then the wine matured in 456-liter oak barrels for 13 months. This is subtler and deeper than the Las Ladieras, but it comes from a similar mold. It's beautifully textured with citrus freshness, and it's refined and elegant with great tension and ultra fine tannins. 3,200 bottles were filled in September 2021. - Luis Gutierrez, robertparker.com
