Distillers can be very protective of their hard-won malts, especially those who carry the most prestigious of names. From time to time, they must relinquish the hold on their casks, when one is sold to an independent bottler, for instance. Before spirit changes hands, the distiller - green-eyed and flush with passion - will take a single teaspoon of another distillery’s single malt, and add it to the spirit in the cask. Just a dash it takes, but that whisky can no longer bear the name its distillery of birth.
The distillery of origin is a darling of Dufftown, where nine stout stills produce a spirit rich in fruit and notably honeyed. Her sister, nestled close by in the Moray countryside, is where the ‘teaspoon’ of malt originated. Though nameless, together they are a powerful and stunning pair.
Independent bottlings of spirit distilled at the Balvenie distillery are rarely found on the market, and though the distillery is notable for having experimented with different cask types, this ex-bourbon cask allows the distillery character to sing finely and clearly, while accentuating the sweet vanilla and stone fruit character.

I was quite surprised because the profile is very different: the wine has a lot more color and up to 2% more alcohol. Nacho Jiménez, one of the partners, explained that the profile of the 2016 vintage was exceptional and hard to replicate, as yields were higher and it rained just before they picked the grapes, so the wine is a lot lighter. 2017 was very different, a lot warmer and with lower yields, and the grapes delivered a concentrated juice with a lot more color, tannin and alcohol. It has a more Mediterranean profile, more in line with the rest of the wines. This fermented with 50% full clusters and temperature control and matured in one 500-liter oak barrel. Despite the higher ripeness and the headier character, the wines from Navatalgordo have a different texture and fine thread, the finesse of a cooler place and sandy soils at higher altitude (even if the vines are south-facing here), and you see it when tasting this next to the wines from Cebreros. 99 Points! Since 1995, Lokoya has produced Cabernet from the Veeder Peak Estate at 548m on the western ridges of the Mayacamas Mountains. This is a do-not-open wine for until at least 2026. Full-bodied with palate-arresting tannins that are super-compact, long, and so densely pixelated they etch themselves into every nook and cranny on the palate. Only a minute later does your mouth find release as this thread of crunchy acidity begins to sweep away the powerful tannins to reveal the underlying blue fruit and violet aromatics that are so beautifully pure and youthful. Simply put, tuck it away for several years and then, if you can, explore bottles every few years until your stash runs out. In the low-yielding 2021 vintage, the skin-to-juice ratio is such that this may prove to be one of the longest-lived Lokoya wines yet, given the intensity of the tannin and the freshness of the underlying acidity. Chris Carpenter makes the Lokoya wines, and the label is owned by the Jackson Family. The winemaking is the same for all the wines, with mostly native yeast fermentation, pump-overs by hand, malolactic fermentation in barrel and ageing for 22 months in 90% new French oak. Carpenter believes that fine Napa Valley Cabernet wines are not only defined by the soils of their sites but also by the Bay Area Pacific breezes that roll in and out daily, cooling the valley from the south to the north in the evenings and from the north to the south in the mornings.
