Nearly half of the fruit was fermented as whole clusters, with just over half de-stemmed into small open-top fermenters. Skin and stem contact averages 30 days, with a 7-day cold soak, more than two weeks of fermentation and one week of extended maceration. Aged sur lie in neutral French oak barrels without sulfur for around 11 months. Deep ruby colour with violet hues. Such purity of fruit is framed by a wildly aromatic core of white pepper, paprika, clove, cedarwood, and smoked sea salt. All that aromatic personality erupts on the palate where all that skin contact layers in a kind of apple skin tannin that has a hefty grip but is nicely integrated and resolves through a current of blood orange acidity. Melville is dedicated to producing cool-climate Pinot Noir, Syrah, and Chardonnay grown exclusively in its estate vineyards throughout the Sta. The grapes for the 2021 Reserva (sold as Crianza in Spain), mostly Tempranillo with some Garnacha Tinta, Mazuelo and Graciano, were picked late in a cooler year when they finished the harvest the 20th of October, with plenty of times for the grapes to develop full aromas and flavors and complete ripeness. It fermented destemmed and lightly crushed in oak vats with indigenous yeasts, separating qualities, villages and soils, and matured in 80% French and 20% American oak barrels, 20% of them new, for 24 months, with racking every eight to nine months. It's a textbook example of their style in a very good year, with power, concentration and clout, elegance and freshness. A larger-production wine, it offers tremendous quality, fermented in wooden vats using indigenous yeasts, the grapes separated by quality, soil type, and village origin. This one in particular is from a beautiful vintage and practically beams in full-bodied concentration, with supple, silky tannins and light touches of oak spice, cedar, balsamic, and white pepper. The Tanbark Hill was bottled in June of 2023. 100% Cabernet Sauvignon, aged up to 20 months. The tannins are quite assertive at this young stage, in classic Spring Mountain Togni fashion, with a fine granularity about them. The wine feels quite complete, teeming with pure dark berry fruits and very fresh. Deeply mineral-tinged dark berries and black currants are framed by a wine with noticeable coiled-up energy and tension. Dense and textured, the 2021 shows ample dark fruit and complex earthy/savory undertones that add balance. The 2021 benefits from the addition of some excess fruit that would have been used in the main label but that, for practical purposes, ended up in the tanks for the Tanbark Hill. The Corpinnat sparkling white 2023 Lucidity is their youngest sparkling wine, produced with Xarel.lo and Macabeu from four different plots—there was less Macabeo in 2023—on limestone of marine origin. It fermented by plot in stainless steel and 300-liter French oak barrels, where the wine was kept with the lees for 11 months, until it was put in bottle to referment. It's a Mediterranean sparkler with energy, structure and freshness, though it has ripeness. It's aromatic, with notes of herbs and even some traces of red fruit, and the palate is a lot sharper and very tasty, with a slate-like, tasty and bone-dry finish and small bubbles that give it texture. It was put in bottle in July 2024 and disgorged in January 2026, after 18 months with the lees. It comes in at 12% alcohol, with a pH of 3.02 and 6.1 grams of acidity. Cabernet Sauvignon rather than Cabernet Franc in this blend, just one of the many ways in which it stands out from its peers even on the limestone plateau of St Emilion, its delicacy suggesting it is one of the most Burgundian of Bordeaux wines. The 2014 Proprietary Red Les Pavots (3,570 cases) is a blend of 60% Cabernet Sauvignon, 20% Cabernet Franc, 13% Merlot and 5% Petit Verdot aged in mostly Taransaud barrels with a small helping of Darnajou thrown in. This wine is fabulous in the vintage, although certainly less profoundly concentrated and extracted, as well as structured, compared to the 2013, which was off-the-charts fabulous. This is a brilliant wine, charming, with front-end loaded plum, blackcurrant and black raspberry fruit interwoven with graphite, tar and truffle notes. The super bargain of the portfolio has to be the red 2017 Viña Cubillo Tinto Crianza, which this year shows more development and faster aging, with more tertiary notes than the other reds from 2013 and 2014 that I tasted next to it. The frost of April 2017 killed 100% of the vegetal mass at Cubillo, and the grapes they picked were exclusively from the second generation, therefore fruit that ripened in a much shorter cycle, as the harvest was also earlier. It has notes of damp earth, mushrooms, truffles and forest floor, dry leaves and decayed flowers and herbs. It has a polished palate and is medium-bodied, with mostly resolved tannins, and it feels a little lighter. But it's still worth it. It was produced with a blend of 70% Tempranillo, 20% Garnacha and 5% each Graciano and Mazuelo from vines averaging 53 years of age. 95 Points! The bottled version of the 2023 La Hoya feels quite serious and harmonious. It spent its first winter in 500- and 600-liter barrels and the second one in a 4,000-liter oak foudre. The nose is quite subtle and a little shy, with finesse. The top part of the plot is sandy, and the lower part has more silt; the combination gives the wine fruit and structure. It comes from a plot in Centales de Uruñuela bordering Huércanos and was planted in 1966 at 500 meters in altitude on limestone-rich soils where they have a field blend of varieties all fermented together that produces a characterful wine with a different, perfumed nose and a medium to full-bodied palate. The number of varieties gives the following breakdown: 52% Tempranillo, 25% Mazuelo, 14% Viura, 7% Garnacha and 2% Maturana Tinta that achieved 13.9% alcohol after fermenting in stainless steel and maturing in second-use French oak barrels for 11 months.
