Based on the original Bigallet brothers' recipe, dating from 1875, this traditional orange-based French bitter is a deep, complex equivalent to the fabled Amer Picon. Distilled multiple times in small copper alembic stills, the neutral grain spirit is macerated each time with a combination of sweet and bitter orange citrus peels. The final infusion also includes sweet caramel and classic bitter agents including cinchona and, of course, gentian. The bitter oranges and botanicals are balanced beautifully on the nose, giving this real dimension. Just a hint of fresh juice lends a slightly sweet reprieve. Another wine I underrated on release, the 2020 Château Haut-Bailly is just about pure perfection, and whereas the 2018 is closer in style to the 2009, this plays things a little closer to its vest and is reminiscent of the 2010. Full-bodied, concentrated, and powerful, it nevertheless cuts a focused, precise path across the palate and brings incredible purity in its darker fruits, smoked tobacco, cedar pencil, and Asian spice-driven aromas and flavors. The tannin quality here is off the charts, and this beauty has everything you could want from wine. Our Winex exclusive cask was aged for 8 years, spending just over 7 years in ex-Buffalo Trace Bourbon barrels and then transferred into fresh Sandeman Ruby Port Casks for 6 months. At 55.9% ABV we recommend just a splash of water. The nose is complex and layered with cocoa powder, stewed cherries and biscuit peeking through the distinctive peat. The peat from Kilchoman has always stood out in my mind because it lacks any medicinal or burnt rubber qualities that turn many off to a peated scotch. On the palate it opens up with a hint of sweetness from the port cask. Flavors of baked cherry tart, citrus marmalade, toffee and dusty cocoa are wrapped cozily with the smokiness of the peat which warms the senses with pipe tobacco, smoldering earth and crushed seashell notes. The finish is long and cascading with a full and satisfyingly round mouthfeel.

95 Points! The 2022 Lagrange was picked between 8 and 30 September, it ages in 60% new oak for a planned 21 months. It has an almost clinical bouquet, with very well defined blackberry and blueberry fruit, graphite and crushed stone. Quite a gap in quality between this and the Fiefs de Lagrange this year. The palate is extremely pure with cashmere tannins, black cherry fruit infused by blood orange, lightly spiced, hints of white pepper toward a very concentrated, fine-boned finish. I’m sure when brewery owners taste sake that is not of their own making, they become jealous if they taste a sake like this. It’s simply not fair! How can rice and water taste like the best flavors in your life? Smooth, round, and velvety, this masterpiece is lush and sumptuous. So expressively smooth and layered, that flavors start counting themselves 1. Honey 2. Papaya 3. Maple syrup 4. Mango 5. Lemon sorbet. And on and on. This is more of an experience than a libation, as you feel your way to the soul of this brew. The take away from this sake is that there is a big difference between balance and perfect balance. 98 Points! The more delicate, ethereal and fine 2023 La Dama has a paler color and is fragrant and subtle, with a sense of fragility and delicacy like no vintage before. The grapes from the lower part of the main vineyard, called Lupier, where you find less slate (but still slate), were picked in early September and were vinified with 100% full clusters and a long maceration. The higher part was vinified separately and might be released as a new single-vineyard wine; but there are only a couple of barrels of it, and they have not yet decided what to do. The alcohol level is contained, at around 13.5%. It's precise, clean and focused and has purity of aromas and flavors, a delicate texture, super fine tannins, balance and lots of energy. Palenqueros Madrecuishe was produced in the village of Santa Maria La Pila at 1552 meters above sea level by fourth generation producer Don Valente Garcìa, alongside his grandson Semei, from cultivated Madrecuishe. Cooked in an oven pit and hand crushed with a wooden mallet, the agave is fermented in cypress and pine wood vats using the ambient yeast of the distillery before it is distilled on a 350 liter copper pot still powered by direct fire. Bottled at still strength of 48.9% with no additives.

Palenqueros is a project initiated by La Maison & Velier’s Luca Gargano and involves six producers from the state of Oaxaca, Mexico. The initial series of 12 certified mezcals in 2019 was a collaboration project with Tradición Chagoya, which owns and operates other mezcal brands like Donaji and Los Cuerudos. The second series, released in 2024, featured 6 agave distillates and was solely a project of LM&V.
