WhistlePig’s vanguard of finishing lies within our Old World Rye, Aged 12 Years. A Rye styled by Old World sensibilities at 86-proof. This whiskey is the marriage of three finishes, each with their own distinctive flavor profiles.

After maturing for 12 years in New American Oak, the spirit is divvied into one of three barrels –Madeira (63%), Sauternes (30%) and Port (7%). Finished to perfection and blended into a symphony of flavor. It started as a grand experiment and ended as the first Rye whiskey of its kind, giving you Rye in all its glory.. and then some. Get ready, wine-lovers: this unusual rosy gin is made from a rye base, infused with gin botanicals, and then is “rested” for 18 months in casks that previously held Syrah and Grenache wines. Oddly, the end result is not particularly wine-, whiskey-, nor gin-like. It's a whole other animal, crazily hoppy and malty and oaky, with a mild effervescence and an amaro-like roots-and-herbs presence that winds into a rounded but fleeting dark-fruit quality on the finish. Michter’s Barrel Strength Kentucky Straight Rye Whiskey is a limited, overproof, straight-from-the-barrel version of Michter’s US*1 Single Barrel Straight Rye Whiskey. Although proof varies slightly by barrel, most bottles of Michter’s Barrel Strength Kentucky Straight Rye Whiskey are somewhere between 107 and 112 proof.

As a result, the whiskey a bold aroma of butterscotch, golden raisins and vanilla, which leads to a palate bursting with morning toast, maple syrup and fresh fruit. The finish is spicy, with noticeable touches of mint, cinnamon and honey which linger on the tongue.

Weighty Rye Meets Jamaican Funk Flavor

Funky Drummer is Doc Swinson’s blend of two five-year rye whiskeys that have had a long break in some seriously funky Jamaican rum casks (look up dunder pits if you want some fun info!). These casks are full of tropical fruit flavors that marry nicely with the heavy rye spice. It took some serious time locked away to get these flavors to play nicely together, but when they did... woah, ain’t it funky! Grab a bottle and bring on the juice!

A limited release

A blend of 2, 3 and 4 year old Rye Whiskey, finished no less than 3 months in wine barrels which previously held several vintages of Ammunition Sonoma Pinot Noir. This unique process imparts a sweetness and tannin unlike that of any other rye. You can smell it on the nose and see it with your eyes.

Dark amber in color, you can expect flavors of rich butterscotch and a hint of citrus. The finish is highlighted by subtle notes of baking spice and red berries courtesy of the Pinot Noir French Oak casks.

E.H. Taylor, Jr. Straight Rye Whiskey is a Bottled-in-Bond release made from a mash bill of rye and malted barley, with no corn, resulting in a whiskey that showcases rye’s bold, spicy character. Its rich mahogany hue reflects the careful aging process.

On the nose, it offers an inviting mix of toasted oak, rye spice, black pepper, mint, and subtle notes of pear. The palate opens with a burst of rye spice and pepper, balanced by caramel sweetness, fresh mint, and hints of citrus. The whiskey’s oily texture coats the mouth, enhancing the complexity of flavors. The finish is long and warming, with lingering notes of cinnamon, nutmeg, anise, and a gentle touch of oak.

Our classic rye recipe features only rye grain and malt to deliver a pure expression of Pennsylvania Rye Whiskey. Barrel aging for least six months in charred, new oak quarter casks allows the genuine rye flavor to evolve quickly. As a result, the small batch whiskey is ensured of reaching the right balance of complexity and smoothness. The final product is a very smooth spirit that delivers the up-front spice that rye is known for while finishing with a full, round mouthfeel.
