It has a spectacular nose that is very expressive, aromatic, clean and open with pungent notes of pollen and beeswax. It fermented with full clusters, indigenous yeasts and a long maceration. It is slightly darker than La Dama, with more clout and some more tannins but all relative to La Dama, which is superlative, because outside that context, this would be super fragrant, elegant and subtle. It has container power, lots of energy and depth and a beautiful combination of wild berries, herbs and flowers. It has a fine-boned, medium-bodied palate and good balance. Disgorged in August 2024 with three grams per liter dosage, it’s composed of 20% from the 2021 vintage (vinified in tank), 50% from 2020 and 30% from 2019, with half of the reserve wines aged on the lees in approximately 30-year-old demi-muids. Heavily based on Oger (around 40% of the blend), with the remainder coming from Oiry, Cramant and Avize, it’s already expressive, offering aromas of honeysuckle, nectarine, bread and fresh hazelnut. From 18 acres of vines growing in a celebrated vineyard named the Fat Sheep.* This is in the adjacent commune of Saint Fiacre, which is the smallest of the 23 communes in the Sèvre et Maine AC and one with some of the best grape- growing land. The rocky gneiss soil here is thin, between 6-14 inches deep, in a seam of amphibolite, a greenish metamorphic rock. The vines were planted between 1930 and 1986, and average more than 50 years old. The meager soil and old vines on this small hill give naturally low yields, averaging 45 hl/ha. After spontaneous fermentation, the wine rests on its lees in underground tanks for twelve to fourteen months. Ripe, round, concentrated and intensely mineral, this wine can age beautifully, developing aromas with bottle age that are a cross between Riesling and Pinot Blanc.

The wine has a smell of fresh sheets, crisp, crushed shells, white spice and ocean air. I appreciate the length and stretch of this wine—it fully extends and lingers, and there is a textural pulsing and undulation. It is truly excellent. 2024 was a warm vintage and produced wines of amplitude and volume, yet here the terroir has compressed the fruit into its own shape. Luigi talks about the Campi Flegrei terroir more than the varieties, but they are also doing genetic testing on the Falanghina. Falanghina Beneventana, from around Benevento, to the north-east of Naples is a completely different variety than Falanghina Flegrea from the Campi Flegrei (near Naples). At La Sibilla, they are growing Falanghina Flegrea, and this is a very distinctive example of how delicious Campanian white wines can be.

This wine comes from a 3-hectare Clos managed under sustainable practices with no use of herbicides. The east-facing vines are 70 years old. The shallow terroir consists of reddish soil mixed with limestone stones, with bedrock often found just 30 cm below.

After manual harvesting, the grapes are pressed slowly. A light static settling is performed to retain as much material as possible before fermentation, which is often very long. This process occurs thanks to the indigenous yeasts naturally present on the grapes. No additives, except for meticulously added sulfites, interfere with the birth of this wine.
