Deep ruby in color, its aromatics have become more layered, with ringing tones of violet complementing blueberry, black cherry and redcurrants, plus sparks of aniseed, prosciutto and desert herbs. The palate is plush and supple, offering alluring spicy accents and generous, yet never onerous, fruit. Refreshing bursts of acidity call you back to the glass, and it finishes with fantastic length. Another wine I underrated on release, the 2020 Château Haut-Bailly is just about pure perfection, and whereas the 2018 is closer in style to the 2009, this plays things a little closer to its vest and is reminiscent of the 2010. Full-bodied, concentrated, and powerful, it nevertheless cuts a focused, precise path across the palate and brings incredible purity in its darker fruits, smoked tobacco, cedar pencil, and Asian spice-driven aromas and flavors. The tannin quality here is off the charts, and this beauty has everything you could want from wine. 99 Points! A blend of 52% Cabernet Sauvignon, 42% Merlot, 3% Cabernet Franc, and 3% Petit Verdot, the 2020 Haut-Bailly is deep garnet-purple in color. It needs a bit of swirling to coax out notions of black cherry compote, blackcurrant pastilles, and blackberry preserves, giving way to fragrant wafts of violets, dark chocolate, cardamom, and sassafras, with a touch of Indian spices. As to the Grand Vin, the saturated ruby/purple-hued 2021 Château Pavie defies the vintage with its ripe, powerful aromatics of cassis, toasted spice, chalky minerality, graphite, and hints of truffly earth. A rich, medium to full-bodied, concentrated, incredibly textured 2021, it has velvety tannins, no hard edges, and a gorgeous finish. It's a testament to the talent and work of this incredible team and is up with the crème de la crème of the vintage. The 2021 is based on 52% Merlot, 30% Cabernet Franc, and 18% Cabernet Sauvignon, brought up in a mix of new and used barrels, hitting 14.14% alcohol and a pH of 3.67. This is the second year for Berliquet under the Canon team, and it is proving to be an excellent addition to the stable of wines - with a more powerful, cocoa bean, espresso and blackberry fruit character than its sibling (and neighbour, as Canon is within walking distance of Berliquet), but still with the mouthwatering, gunsmoke, salted caramel and saffron hit of a limestone-dominant terroir. 45hl/ha yield, 45% new oak for ageing. 94 Points! The 2019 Berliquet is showing beautifully, wafting from the glass with aromas of cherries, wild berries, sweet spices, violets and forest floor. Medium to full-bodied, seamless and elegant, with terrific depth at the core, lively acids and ripe, powdery tannins, it concludes with a long, mineral finish. It's produced from a 9.5-hectare vineyard that encompasses three soil types: Saint-Émilion's limestone plateau (like its sibling, Château Canon); the slope, characterized by deep clay; and then sandy, colluvial soils at the foot of the slope.
