Deep, clear and pure on the fragrant yet intense and refreshing nose that shows lemongrass, ginger and herbal as well as saline slate aromas. Very generous and lush yet also refined and filigreed on the palate, this is a savory and stimulating saline Auslese with fine, crystalline acidity and candied lemon and grapefruit aromas on the long finish. There are 140 grams per liter of residual sugar, which do not taste extraordinarily sweet but round and generous. The grapes were picked in early October with 15% of botrytis. 8% stated alcohol. Fortunately, every Pavie has benefitted since Perse began a complete makeover of this estate in 1998. From 47-year-old vines, the 2012 has an inky purple color, judicious toasty oak in the nose interwoven with copious blackberry and blackcurrant fruit, Christmas spices, as well as licorice and graphite. Full-bodied, rich and moderately tannic, it will require 5-7 years of bottle age but should drink well for 20-30 years. Kudos to Chantal and Gerard Perse for their extraordinary commitment to quality, which is so evident in this more challenging vintage than some of the great years like 2009 and 2010. Then again, this tiny parcel is perched on Saint-Émilion's famed limestone plateau. Inky dark fruit, chocolate, licorice, lavender and menthol all stain the palate. In fact, it looks like 2014 was the antithesis of 1998, a year that saw the Right Bank and the early-ripening-merlot-dominated blends triumph over the Left Bank; as I’ve just written, I believe 2014 is showing much better for cabernet sauvignon and the Right Bank. Even so, this was tight and powerful with hints of cream and blueberries. It was full and pretty with firm tannins. On the finish it was so long and intense. Some balsamic and dried fruit undertones.
