This marvelously incisive Pouilly-Fuissé is a blend of two parcels in Vergisson with two different soil types; both are cool terroirs that bring an exotic tropical note of passionfruit and pomelo to the wine along with a strong mineral underpinning. The texture has a lively acidity, but there is real ripeness to give the wines a delicious dynamic balance. At more than 70%, this blend contains one of the highest proportions of Cabernet Sauvignon in the property's recent history, and the result is a wine of real nobility. Offering up aromas of violets, wild berries, licorice, loamy soil and cigar wrapper, it's full-bodied, layered and multidimensional, with notable depth at the core, lively acids and ripe, powdery tannins that assert themselves on the finish. From the importer: Defaix’s “Côte de Lechet” is a master class in mineral precision. This remarkably steep site (a 45% gradient) with very poor soil produces a wine that Danny describes as embodying “the real, true mineral expression of Chablis.” Freshly blasted chalk dominates the nose, with notes of lemon, honey, and fresh herbs lurking underneath; still, this is a wine of minerality first and foremost. The family owns a 3.5-hectare parcel of 45-year-old vines in this distinctive cru, most of which are planted within a parcel known as the Clos des Moines.
