Spontaneous native yeast fermentation, One third of the wine is then aged on the lees for 14 months in Terracotta Amphora, the rest in stainless steel to maintain its bright character. JB eventually returned to his native Loire and spent several years working with François Chidaine in Montlouis-sur-Loire. He remains closely tied to the Chidaine family as he is married to François' daughter. In 2016, he took over his family estate in Amboise and invited Stéphane to join him in the project.
From the get-go, the two friends were aligned in their vision in making wines with purity and precision as well as their commitment to farming organically and biodynamically. Their farming practices including hoeing every two weeks to aerate the soil and encourage microbial life, treating the vines only as required, thinning leaves, and harvesting manually. Fermentations are always with native yeasts and with their sparkling wines, tirage is done at the domaine.

Gramona Gessami Blanco 2022
$21.98From the importer: What strikes many as an unusual blend is fairly common in Penedes – aromatic whites made from a mix of “northern” and indigenous varieties. In the case of Gessami, it is a blend of the native Muscat (both Frontignan 35%, and de Alexandria 15%, which are grown by Gramona) and the non-native but heat-tolerant Gewürztraminer 15%, and Sauvignon Blanc 35%. Over a third of the cuvée is Sauvignon Blanc, which provides a fresh herbal lift and vibrant acidity. To ensure a balanced wine, the grapes are picked just as they reach ripeness to ensure plenty of acidity to balance the 6g/L of residual sugar that is retained. Depending on the vintage, either one or both Muscat varieties are used in addition to a small proportion of Gewürztraminer to boost the aromatics. Such a floral and alluring wine is fittingly named Gessami, which in English means Jasmine.

After hand picking at night, the fruit was gently pressed as whole clusters, the juice was settled overnight, then transferred to barrels for a native fermentation. The slow conversion of grape sugars gives complexity and increased mouthfeel. A lengthy primary and secondary ferment was encouraged by occasional stirring of the yeast lees. Like an “old world” Chardonnay from an esteemed vineyard, this wine hid its true qualities for months in the barrel.
