From the producer: To make this extraordinary gin, we forage wild plants in the mountains around the distillery. What we pick goes fresh into the still within hours of foraging. All the plants are sustainably picked by our full time forager, every day we distill. We take a lot of care that we don't adversely affect the areas we find them in. That means sometimes using scissors rather than picking to make sure roots aren't pulled, or maybe skipping a few before picking the next one, or finding different patches of the same plant, to make sure an area isn't over-foraged.Our aim is to leave no trace that we were ever there. It's harder work but worth it to keep the mountains beautiful and wild.Then these wild botanicals are painstakingly slow-distilled to tease out delicate flavours, in very small batches of less than 250 liters. Some go in the pot, and some are hung in a basket to let vapours extract their essential oils. The cut-points are decided batch by batch, by smell and taste (never timed or automated) as if each batch is the first. This brings the flavour our Wild Gin to a whole other level. The knowledge, experience and man-hours in each bottle are what make this liquid so special.

Wild Common Tequila Reposado is lightly aged in used bourbon barrels. This resting process yields notes of cooked agave, fresh roasted pecans, and raw honey. On the medium-to full-bodied palate there’s more succulence, but even there the crushed-stone minerality keeps everything very cool and straight. 93 Points! Deep and concentrated, with ample stone and citrus aromas, the mirabelle aroma as intense as that of Amalfi lemon. Quite an austere style, but with all this ripeness to balance the firm structure that’s no problem. Intense herbal and chalky character at the very focused finish. Even better (as well as a perfect wine), the 2017 Châteauneuf Du Pape Collection Charles Giraud checks in as a nominal blend of 60% Grenache and 40% Mourvèdre that was brought up in demi-muids. It reveals a deep purple color as well as heavenly notes of blackberry and currant fruits intermixed with loads of cured meats, spice box, Asian spices, and a distinct loamy soil and minerality. Always more structured and powerful than the Reserve Auguste Favier release (no doubt due to the Mourvèdre component), it hits the palate with full-bodied richness, building yet polished tannins, flawless balance, and a great, great finish. Pure perfection in a glass, it’s as good as wine gets. Give bottles 2-4 years and enjoy over the following two decades. From the importer: The domaine’s top red wine is the cuvée Charles de Batz, which was the original name of d'Artignan. The wine is composed of 90% Tannat with 10% Cabernet Sauvignon from vines that are between 50 and 100 years old. After being completely destemmed, the Cabernet and Tannat are fermented separately in cement tanks. During this time, a bit of micro-oxygenation or microboullage takes place. The wine then goes into oak (50% new) in an underground cellar where it also undergoes malolactic fermentation. After 12 months in wood, it is blended and bottled after a very light filtration.

Very ripe, rich Madiran that takes no prisoners. This wine succeeds in obtaining more fruit than tannin! The color is nearly opaque—wine doesn't get much darker than this. It displays notes of black fruit (blackcurrant and blackberry) along with just a hint of red fruit. There is a cedar-like creaminess to the oak which is extremely well-integrated. Tannins pick up on the finish but, let's face it, this is Madiran and that is to be expected. These tannins seem to dissolve when the wine is matched with richly flavored meats like leg of lamb, duck, goose or game.
