Eden Mill, located in Guardbridge near the historic town of St Andrews in Scotland, presents their 2024 edition of the Art of St Andrews series—an annual release that pairs craft whisky-making with local artistry. This edition is matured in Oloroso and Pedro Ximénez sherry casks, finished in first-fill Amarone wine casks from Italy’s Veneto region, and bottled at 46.5% ABV.

Tasting Note:
In the glass it shows a rich copper hue. The nose opens with mulled wine aromas, vivid red fruits, and gentle clove spice, followed by hints of cherry bakewell tart and rum-and-raisin ice cream. On the palate red fruits give way to dark fruits such as blackberry compote and fig jam with a whisper of cracked black pepper. The finish lingers, offering glazed cinnamon bun and glacé cherries with sweet-spicy depth.

98 Points! 2021 was marginally cooler for whites, and while this is young, its power is irrepressible yet it also shows restraint and harmony. A fine gauze of delicate florals and spice tucked behind structure, power and tension. Tuberose, green peppercorn, pear skin, preserved lemon, green cardamon and peach blossom. The palate offers jewelled hues of peach pit; a little flint, lots of wet stone minerality and crushed white sage dance with a very fine thread of salinity and lacy acidity. This wine bears the fruits of the diligent labor in the vineyards and is one of the shining lights in the region this year. Using hand-forged tools, we pursue the venerable art of tequila making, led by third-generation master tequilero Felipe Camarena. Our Reposado is crafted from estate grown ripe blue agave. Before baking, the green hearts are taken out of each and every agave, which eliminates a vegetal taste and offers more sweetness to the taste. After the agave has been evenly baked and crushed with “Frankenstein” (mechanical tahona), it is then fermented for four to five days using only natural yeasts. Once fermentation is complete it is then carefully double distilled with pure rainwater and natural spring water in 100% copper pot stills. With no glycerin, chemicals or flavors added, the result is pure handcrafted tequila. Barrel aging for six months in American oak helps develop its rich flavors.

INSPIRED BY THE OLD-WORLD TECHNIQUES OF SCOTTISH AND IRISH WHISK(E)Y DISTILLERS WHERE MUCH OF THE MAGIC LIES WITH THE ART OF BLENDING.

We borrowed and twisted many of these techniques to produce Doc’s Alter Ego Bourbon. Our goal was to take good whiskies, blend them together and see how we could enhance these blends as well as maintain the flavor of the whiskey itself. After years of finishing whiskies in a variety of casks, we believe we have struck success using Olorosso Sherry, Pedro Ximenez Sherry, and Cognac casks from a number of curated producers.

Whether accentuating or layering in characteristics, we believe these techniques enhance the spirit and still focuses on the bourbon. These casks allow the delicate characteristics of past occupants to mingle and marry with the smooth yet bold aspects of Doc’s Straight Bourbons. Each release is then meticulously blended and married in ex-Cognac Foeders prior to bottling. Our finishing and blending techniques impart a dry nuttiness, subtle sweetness, and an extended finish to an already great whiskey, while still allowing the bourbon to shine.
