Why\nnot?&nbsp; Granted winters here in Southern California aren\u2019t necessarily all that\nsevere.&nbsp; This year, so far, it has been a\nparticularly mild one.&nbsp; But, consistent\nwith our message, pink wines can play all year long as aperitifs or perfect\nsolutions with a variety of dishes, even ones consumed indoors!<\/p>\n\n\n\n<p>The\nindustry itself has done a marginal job handling the explosion in popularity of\nros\u00e9 wines.&nbsp; Far too many folks have\ngotten involved in rose production with no experience and have littered the\nlandscape with pinks that are flabby, alcoholic, and not particularly\ndistinctive.&nbsp; The \u2018good guys\u2019, the proven\nperformers responsible for initiating the craze in the first place, are still\ndoing great work and it is those that we focus on.&nbsp; <\/p>\n\n\n\n<p><strong>Cavalchina <\/strong>has been on our shelves in various colors over the years\u2026red, white, and pink.\u00a0 They are a quality producer in the Veneto that makes consistently exciting wines in a place that, by and large, is mainly seen as the source of mass marketed, innocuous efforts from wine \u2018factories\u2019 destined for red-checkered tablecloth eateries\u2026Bardolino.\u00a0 The Cavalchina folks are shining stars in a region that is largely uninspired.\u00a0 The Chiaretto (key-ar-et-to)is what they call their ros\u00e9.\u00a0 This is a winery that has been around since 1948 and Vinous Media\u2019s Ian D\u2019Agata calls them, \u201c\u2026a recognized master in the making of Chiarettos.\u201d<\/p>\n\n\n\n<p>A brief\nword about pinks in general.&nbsp; The\nindustry as a whole has created an image in the public\u2019s mid that buying ros\u00e9\nis like buying fish.&nbsp; You want it as\nfresh as possible. That is true to a point.&nbsp;\nYou won\u2019t necessarily get the best experience out of a 5 or six year old\npink.&nbsp; But some ros\u00e9s aren\u2019t even\nreleased until they are a year old, and others (like Tavel, for example) don\u2019t\nhit their full potential until year two and cruise into year three.&nbsp; <\/p>\n\n\n\n<p>In fact,\na lot pinks hit the shelves these days <em>too early<\/em>, before they are really\nsettled in.&nbsp; We are keenly aware of that\nas we have been tasting 2019s since mid-January.&nbsp; Our point is that this offering isn\u2019t about\n\u2018unloading\u2019 one of the best ros\u00e9 values on the floor like yesterday\u2019s\nbread.&nbsp; We simply had so much other stuff\ncome our way over the last six moths that we never got around to doing this\npiece.&nbsp; This little beauty has enough\nverve, texture, and subtle minerality to waltz through the next summer and\nbeyond.&nbsp; It\u2019s a little less \u2018fizzy\u2019 than\nit was last spring, but we don\u2019t see that as an issue.&nbsp; All of the fresh citrus\/melon flavors and\nmineral\/saline augments are perfectly on point.<\/p>\n\n\n\n<p>D\u2019Agata\u2019s narrative explains a lot about the technical aspects of the <strong><a href=\"https:\/\/www.winex.com\/catalog\/product\/view\/id\/23675\/s\/cavalchina-bardolino-chiaretto-2018\/\">Cavalchina Bardolino Chiaretto 2018<\/a><\/strong>, besides providing a rather impressive score for a pink wine, <em>\u201cStraw-pink with a copper tinge. The very clean nose offers fresh pomegranate, apple, pear and herb aromas. Then also clean and fresh in the mouth, with some hints of residual sweetness enrobing the melon and pink grapefruit flavors. A lovely Ros\u00e9 from a recognized master in the making of Chiarettos. Made with a blend of (native varietals) 55% Corvina, 35% Rondinella and 10% Molinara; the presence of the latter grape is absolutely key in explaining this wine\u2019s freshness and saline bent (plus the fact that many of this estate\u2019s vines are extremely old, planted back in 1911)\u2026<strong>93 points.<\/strong>\u201d<\/em><\/p>\n\n\n\n<p>Our\nlittle meal last week reaffirmed the idea that it is great to have some pink\nwine around all the time.&nbsp; For aperitif,\nand a great many food \u2018applications,\u2019 this outstanding pink makes a lot of\nsense year round.&nbsp; It belongs in\neveryone\u2019s working wine matrix.&nbsp; The\nprice ($14.98), given the performance, only enhances the proposition.&nbsp;&nbsp;&nbsp; We apologize for getting to this one a\nlittle later than we wanted.&nbsp; But, trust\nus, this is a value gem and a bright, stylish \u2018winner\u2019 who\u2019s \u2018expiration date\u2019\nis still quite a ways off.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>The other night, a decision had to be made about what to serve with a couple disparate of dishes that could play well with both.&nbsp;&nbsp; A white simply would get overwhelmed but a red was a little too heavy. &nbsp;The answer, which worked beautifully, was a pink wine.&nbsp; Ros\u00e9 in the winter?
