Agave

Kilinga Bacanora is a family-owned producer established in 2018 by maestro bacanorero Rodrigo Bojórquez Bours in Álamos, Sonora, Mexico. It holds the distinction of being the first officially designated Bacanora by the Consejo Sonorense Regulador del Bacanora available in the United States. Crafted from wild Maguey Pacifica (Agave Angustifolia), the agave is pit-roasted in the traditional Sonoran method and distilled to produce a spirit with over 300 years of heritage behind it. This Blanco expression is unaged, bottled at 42% ABV to capture the pure, untempered character of the agave.

Tasting Note: The nose opens with aromatic smokiness, sweet roasted agave, and an earthy butteriness accented by toasted hazelnut and mild spice. On the palate, bold toasted caramel meets minerals and wildflowers, with an assertive but balanced smokiness threading through. The finish is smooth and refreshing, with cooked agave and gentle herbal notes lingering cleanly.

Madre Tequila Blanco is made from 100 % Blue Weber agave grown in the highlands of Jalisco. Crafted with an emphasis on purity and a clean agave expression, it is distilled using traditional methods and bottled unaged to highlight the fresh character of the plant.

Tasting Note:
Fresh aromas of cooked agave and lime zest open the nose, with hints of white pepper and gentle herbal notes. The palate is crisp and lively with bright citrus, green apple, and subtle mineral undertones. The finish is clean and refreshing with a smooth, natural agave sweetness.

PM Spirits Project Tequila is a collaboration with Jose Luis Gutierrez and produced at NOM 1468 in Jalisco, from 100% estate-grown Blue Weber agave. Each batch is the product of a single horno (oven), distilled in copper pot stills, with no additives. The Blanco is briefly rested (around 15 days) in ex-bourbon barrels before bottling.

Tasting Note:
On the nose, fresh agave, bright citrus peel, and subtle herbs emerge with a clean mineral edge. The palate is crisp and expressive lime, green apple, and gentle floral nuances mingle with a hint of toasted oak. The finish is smooth and refreshing, leaving a soft agave sweetness and a touch of peppery spice.

Named after the revered Xoloitzcuintle, Mexico’s ancient hairless dog and national treasure, this tequila pays homage to deep cultural roots. Crafted from 100% Blue Weber agave, it is produced using traditional methods to preserve the true character of the plant. Plata, or silver tequila, is bottled unaged to highlight purity and freshness.

Tasting Note:
Bright aromas of cooked agave are lifted by citrus zest and a touch of white pepper. The palate is crisp and lively with herbal undertones, fresh lime, and a hint of mineral salinity. The finish is clean and refreshing, making it ideal for sipping neat or mixing into vibrant cocktails.

The Blanco 110 is a high-proof expression bottled at 55% ABV, designed to showcase the bold character of estate-grown agave. Despite its strength, it maintains balance and clarity, reflecting La Alteña’s commitment to traditional production.

Tasting Note:
Intense aromas of roasted agave, lime zest, and pepper leap from the glass. The palate is full-bodied and powerful, layered with citrus, herbs, and a peppery spice that lingers with a long, fiery finish.

Tapatio is produced at La Alteña Distillery in Jalisco, founded in 1937 by Don Felipe Camarena. Known for traditional methods such as brick oven cooking and slow fermentation, the distillery emphasizes pure agave expression and heritage craftsmanship.

Crafted in Oaxaca from 100% Espadín agave, Claridad celebrates traditional mezcal-making with small-batch, artisanal methods passed down through generations.

The mezcal opens with soft herbal and mineral notes, layered with hints of tropical fruit and a touch of spice. Our favorite 'workhorse' blanco tequila for your home bar. Cimarrón Tequila from Atotonilco, Jalisco is distilled from hillside agave grown at 4,620′ elevation, where plant sugars reach an average of 24-26° Brix. A low-pressure, slow agave roast creates Cimarrón’s bright, forward flavor, and fermentation is entirely natural using winemakers’ yeast.

Palenqueros Madrecuishe was produced in the village of Santa Maria La Pila at 1552 meters above sea level by fourth generation producer Don Valente Garcìa, alongside his grandson Semei, from cultivated Madrecuishe. Cooked in an oven pit and hand crushed with a wooden mallet, the agave is fermented in cypress and pine wood vats using the ambient yeast of the distillery before it is distilled on a 350 liter copper pot still powered by direct fire. Bottled at still strength of 48.9% with no additives.

Palenqueros is a project initiated by La Maison & Velier’s Luca Gargano and involves six producers from the state of Oaxaca, Mexico. The initial series of 12 certified mezcals in 2019 was a collaboration project with Tradición Chagoya, which owns and operates other mezcal brands like Donaji and Los Cuerudos. The second series, released in 2024, featured 6 agave distillates and was solely a project of LM&V.

Atanasio Blanco Tequila is an artisanal tequila crafted from 100% Blue Weber agave, harvested at peak maturity in the highlands of Jalisco, Mexico. It offers a bright, clean profile with notes of cooked agave, citrus, and subtle pepper, perfect for sipping or cocktails. Produced by the Atanasio family, this small-batch tequila reflects a deep respect for tradition, using slow-cooking methods in brick ovens and double distillation to ensure purity and complexity. The Atanasio distillery emphasizes sustainability and craftsmanship, making each bottle a testament to their passion for authentic tequila.

A mezcalero's take on tequila.

It's a tequila aged for 6 months in American oak barrels. At the end of its aging process, it goes through our activated charcoal filters to achieve greater smoothness and the characteristic of a true clear tequila.

Visually, it has a clear color, with less intensity than our blanco tequila, but it maintains its silver hues.

In terms of aroma, the first scent is of agave, however, it evolves to obtain earthy notes, the characteristic scent of an agave plant.

It has a flavor of white oak barrel, with a smoother taste due to the filtration process, yet sweet, with a rich spiciness and astringency.

Xicaru Silver 102° differs from Xicaru Silver in the way it is distilled. A narrower cut is taken from the heart, where the alcohol, smoke and maguey are more concentrated. Xicaru Silver and Xicaru Silver 102° both utilize traditional mezcal production methods passed down from generation to generation.

The crisp, high proof of Xicaru Silver 102° asserts itself in all aspects, dominating on the nose and palate before gradually softening to the rich, smoky and vegetal notes of traditionally-produced, artisanal mezcal. The finish is warm and lasting.

From Cazcanes: Our Still Strength Blanco (54% ABV) was placed in a Napa Valley Cabernet Sauvignon, first-fill French Oak casks. It was aged for 31 days and then bottled at 50% ABV or 100 proof.

This is a limited edition. This is the only batch that will be made this year.
