The freshly picked grapes were cold-soaked on the skins for 6-8 hours, before going to press, a process that enhances the fruit’s natural aromatics. The wine was cold fermented slowly in stainless steel tanks to further its wonderfully aromatic bouquet and delicate flavor profile. While it’s still lean and punchy, the vines’ diet of more sun and deeper subsoils reveals itself in a glimmer of glycerol succulence on the mid-palate and a rounder, longer finish.     Importer notes: The wine is composed of 90% Tannatwith 10% Cabernet Sauvignon from vines that are at least 50 years old. The soil in these vineyards is clay and limestone with some round stones at the surface. After being completely destemmed, the Cabernet and Tannat are fermented separately in cement tanks. During this time, a bit of micro-oxygénation or microboullage takes place. The wine then goes into oak (60%) in an underground cellar where it also undergoes malolacticfermentation. If you are talking about a great functional wine at a value price, an excess of superlatives and an expansive story could end up being counterproductive. On the other hand, if we are too concise with our words, people might interpret that as a lack of enthusiasm. Be that as it may, the Dashwood Sauvignon Blanc Marlborough 2018 deserves a word or two. This has been a staple for us during long stretches of our history. There has been some label tweaking and some inconsistencies along the way, but this is the best version of this wine in many years. Many examples of the Kiwi 2018s are overtly acidic, but the one hits all the right notes with tropical and grapefruit notes, bright but not overly aggressive acidity, none of the 'green' flavors that plague many 'value' Kiwi bottlings, and substance on the palate.
