    Importer notes: The wine is composed of 90% Tannatwith 10% Cabernet Sauvignon from vines that are at least 50 years old. The soil in these vineyards is clay and limestone with some round stones at the surface. After being completely destemmed, the Cabernet and Tannat are fermented separately in cement tanks. During this time, a bit of micro-oxygénation or microboullage takes place. The wine then goes into oak (60%) in an underground cellar where it also undergoes malolacticfermentation.     From basically the center of France, this old vines cuvee of Gamay Saint-Romain (slightly different than the Gamay in Beaujolais), was planted 80 years ago and is now farmed with organic and biodynamic methods on a terroir of clay and granite soils. A 1.7-hectare walled vineyard, situated at an altitude of 515 meters, facing east. Ploughing, natural grass cover crops, debudding, leaf thinning as well as harvesting by hand are all practiced at this estate, located at the foot of the Massif Central. Vinification: 75% de-stemmed, maceration for 18 days, some punching down of the cap, and maturation in 1-to-5-year-old, 500-litre barrels for 11 months. It is fermented with ambient yeasts, completes malolactic, and is bottled only when the wine is deemed 'ready'. Thivin makes it like any other serious wine of and allows it to run its natural course rather than manipulating it to "some 'designer' specs and rushing it into bottle. The result is a sleek, nervy, mineral-laced, suave rosé that expresses the nuances of where it comes from...granite soils outside the cru of Brouilly. From a one-hectare parcel of 50-year-old vines in sand and pink granite, there's succulent flesh and a mouthwatering finish punctuated by a pleasant salinity, but the insistent minerality is a definite stylistic distinction.     Foillard's just-released 2017 Morgon Côte du Py is a great success, unwinding in the glass with aromas of red fruit compote and cherries that are complemented with aeration by beautiful top notes of rose petal, blood orange and violets. On the palate, it's medium to full-bodied, with a generous core of ripe but succulent fruit, tangy acids and powdery structuring tannins that assert themselves gently on the long, sapid finish.
