    Importer notes: The wine is composed of 90% Tannatwith 10% Cabernet Sauvignon from vines that are at least 50 years old. The soil in these vineyards is clay and limestone with some round stones at the surface. After being completely destemmed, the Cabernet and Tannat are fermented separately in cement tanks. During this time, a bit of micro-oxygénation or microboullage takes place. The wine then goes into oak (60%) in an underground cellar where it also undergoes malolacticfermentation. Fermentation and aging are completed in stainless steel, and the wine is bottled before the following harvest. (There are two things I like about wines that aren't aged in oak; one of them is that they taste of fruit, rather than oak, and the other is that they are better value.     This Barbera is produced from grapes harvested in the “Garblet” vineyard (also known as “Fiasco”) of Castiglione Falletto from a 0.8 hectare plot on a south-southeast facing slope at 250 meters altitude. The major part of the vineyard was planted in 1970 with a portion being replanted in 1993. The “Sori del Drago” is fermented at 28 degrees Celsius for slightly more than a week. The wine is then racked into stainless steel tank and is aged for 15 to 18 months before being bottled (unfiltered). Learn More
