    From basically the center of France, this old vines cuvee of Gamay Saint-Romain (slightly different than the Gamay in Beaujolais), was planted 80 years ago and is now farmed with organic and biodynamic methods on a terroir of clay and granite soils. A 1.7-hectare walled vineyard, situated at an altitude of 515 meters, facing east. Ploughing, natural grass cover crops, debudding, leaf thinning as well as harvesting by hand are all practiced at this estate, located at the foot of the Massif Central. Vinification: 75% de-stemmed, maceration for 18 days, some punching down of the cap, and maturation in 1-to-5-year-old, 500-litre barrels for 11 months. Thivin makes it like any other serious wine of and allows it to run its natural course rather than manipulating it to "some 'designer' specs and rushing it into bottle. The result is a sleek, nervy, mineral-laced, suave rosé that expresses the nuances of where it comes from...granite soils outside the cru of Brouilly. From a one-hectare parcel of 50-year-old vines in sand and pink granite, there's succulent flesh and a mouthwatering finish punctuated by a pleasant salinity, but the insistent minerality is a definite stylistic distinction. Fermentation and aging are completed in stainless steel, and the wine is bottled before the following harvest. (There are two things I like about wines that aren't aged in oak; one of them is that they taste of fruit, rather than oak, and the other is that they are better value.
