The agaves used in its production are 100% estate-grown agaves from Los Altos (aka Highlands) of Jalisco. After the agaves cook for three days in a horno (oven), they are then crushed by a two-ton tahona stone. Fermentation and distillation includes not only the aguamiel (cooked agave juice), but the fibers and pulp. It is distilled to proof meaning no water is added. It is bottled without aging at 80 proof. The aroma is as if you buried your nose in a green smoothie filled with fresh-cut cabbage, romaine lettuce, kiwi, pear, aloe vera while preparing a beurre noisette (brown butter). These aromas follow on the palate where you’ll also find ripe heirloom carrots, Kaffir limes and roasted pear. Palenqueros 'Valente Garcia' Madrecuishe Mezcal

Cooked in an oven pit and hand crushed with a wooden mallet, the agave is fermented in cypress and pine wood vats using the ambient yeast of the distillery before it is distilled on a 350 liter copper pot still powered by direct fire. Bottled at still strength of 48.9% with no additives.
Palenqueros is a project initiated by La Maison & Velier’s Luca Gargano and involves six producers from the state of Oaxaca, Mexico.
