Davorin Kuchan has been distilling spirits since his early days as a winemaker and eau-de-vie expert back in Croatia. When he established Old World Spirits here on the San Francisco Peninsula (right outside of Belmont), he brought with him the traditions and expertise of old world production methods and used them to formulate West Coast versions of his original spirits. Using a unique finishing process (including granite and active charcoal sedimentation) and an ultra-slow, subsonic, continuous, multi-stage filtering process, Davorin has created a California version of his old St. Blaise vodka; a tribute to the patron saint of Croatia. Based off his eau-de-vie and grappa filtration methods, the idea is to polish and soften the spirit without striping the inherent character. The vodka is proofed with soft California Sierra spring water. The final product is soft, supple, and slightly creamy in texture with accents of sweet fruit in the background. It's one of the most pure and elegant vodkas we've ever tasted.

A wine that transcends the vintage's challenges, the 2021 Figeac is performing brilliantly in bottle, wafting from the glass with aromas of raspberries and cherries mingled with striking top notes of violet, rose petal, iris and mint. Medium to full-bodied, satiny and suave, it's pure and vibrant, its enveloping core of fruit framed by ultra-refined tannins, concluding with a long, floral finish. Readers in the habit of drinking top grand cru Burgundy are liable to find themselves seduced by this immensely elegant, perfumed Saint-Émilion, a wine I'll definitely be adding to my own cellar. It's the result of gamble that paid off, as Figeac's team chose to wait to pick their Cabernet Sauvignon despite the menace of forecast rain—a menace that, in fact, scarcely transpired. Bright and fresh, excellent tannin integration, mid-palate depth and a salty, liquorice twist at the end. You almost want to chew this wine, yet it's spot-on and totally moreish; freshness is the focus but not a beat is missed with the texture and mouthfeel. The 2021 Haut-Bailly, a blend of 65% Cabernet Sauvignon, 22% Merlot, 10% Petit Verdot and 3% Cabernet Franc, reveals a complex, brooding bouquet with aromas of blackcurrant, spices, plums, spring flowers and smoke. Medium to full-bodied, it’s a lively, rather muscular wine with a fleshy, dense core of fruit, tangy acids and powdery tannins. Despite its firm character, I like its overall balance. 97 Points! The winemaker calls this wine chic, and it is, with enticing aromas of blackcurrants, chocolate, walnuts, nutmeg, bark and forest floor. Some graphite and dark mushrooms. Medium-bodied with very integrated tannins that melt into the wine, with super length and finesse at the end. It’s the subtle texture and pure and complex fruit character that impress. 65% cabernet sauvignon, 22% merlot, 10% petit verdot and 3% cabernet franc. 94 Points! The only white produced here is the 2020 Viñas de Gaín Blanco, which is balsamic and aromatic, floral and herbaceous, from a fresher and more elegant vintage. It fermented with some skins to give it complexity and volume, but he has reduced the time the wine is in contact with the skins, and this year, the wine finished part of the fermentation in used 600-liter demi-muids and was kept in stainless steel with lees for two years. They have stopped racking the white, and they feel it keeps a livelier character. It has the profile of the traditional Rioja whites with a modern twist, cleaner, more focused and precise. It has a moderate 13% alcohol, a pH of 3.31 and 6.05 grams of sugar, fresh and vibrant. 99 Points! Just about pure perfection as well as a desert Island wine, the 2018 Côte Rôtie La Mouline comes from a tiny parcel in the Côte Blonde lieu-dit and spent four years in new barrels. Incredible notes of black raspberries, spring flowers, bacon fat, smoked game, violets, and pepper all emerge on the nose. These carry to a full-bodied, round, supple, sexy Côte Rôtie offering ultra-fine tannins, an insane level of purity, no hard edges, and a monster of a finish. The 2019 Odyssee is an eclectic blend of Bordeaux and Rhone vineyards, made by Pierre Graffeuille (now at Montrose) and Matthieu Dumarcher, composed of 55% Cabernet Sauvignon from the Medoc, and 25% Grenache and 20% Mourvedre from the Rhone. Medium garnet-purple in color, it springs from the glass with vivacious notes of black raspberries, mulberries, and juicy plums, followed by an undercurrent of crushed blackcurrants, Indian spices, and charcoal with a waft of garrigue. 95 Points! A blend of 90% Cabernet Franc and 10% Merlot, the 2022 Château Petit Gravet Aîné exhibits a ruby/plum hue as well as terrific aromatics of red, blue, and black fruits interwoven with lots of gamey, floral, and tobacco nuances. This carries to a medium to full-bodied Saint-Emilion that has ripe tannins, beautiful overall balance, and a great finish. 94 Points! The 2022 Petit Gravet Ainé is a gorgeous, exotic wine. Kirsch, dried flowers, mocha and new leather open. Ripe, fleshy and layered, the 2022 is definitely on the riper side.
