The 27-hectare vineyard is planted on three parcels. Numerous passes are made in the vineyard to ensure the perfect health, quality, and ripeness of the grapes, and all the work is carried out by hand as, since 1992, no chemicals have been used. Grapes for the Cahors are pulled from 30+-year-old, estate vines primarily from the 1st and 3rd terraces within Cahors, as well as the plateau with limestone. The largest plot (12.5 hectares), consists of colluvial limestone; the two other plots (5.5 hectares and 7.5 hectares) are a mixture of pebble stones and ferruginous red sands on the top and siliceous earth and clay on the bottom.Harvest & Vinification
Manually harvested, then sorted in the vineyards, the grapes are destemmed upon arrival in the cellar. Macerated for 30 days with daily punching down of the skin cap at the beginning of fermentation. Fermentation temperature does not exceed 28° C, and malolactic fermentation is carried out in oak barrels. The wine is aged for 20-22 months in new oak as well as in old barrels used once or twice. Bottled unfined and unfiltered. -

Michael David Cabernet Sauvignon Zero Gravity 2023
$16.98In February 2021, Michael David Winery sent four 70ml frozen Lodi Cabernet Sauvignon samples to the International Space Station to investigate the microbial ecology and dynamics of grape juice fermentation in the absence of gravity. Meanwhile, identical samples remained on Earth in an environmental control chamber that mimicked the ISS ambient temperature. When the experiment began, the portions were thawed at the same time, allowing native microbes to ferment. At the conclusion of the experiment, the samples in space experienced CO2 build up, a sign of successful fermentation.
Once the samples arrived back on Earth, they were sent for DNA fingerprinting and DNA sequence matching to determine the number and identification of the different propagations. It was found that the juice fermented in Zero Gravity propagated different species than the sample that remained on Earth. The Bechthold Vineyard is indeed the oldest Cinsaut planting in the world, struck on its own roots in 1882 and farmed organically. Nearby, the Royal Tee Vineyard was planted in 1889, comprising 82% Zinfandel, 8% Carignan and the remainder a mix of Flame Tokay, Black Prince, Mission and Muscat table grapes. The majority of this blend is Carignane from the “1900 Block” of Jessie’s Grove, which includes 10% of the almost extinct white grape Monbadon, also known as Berger. All of these vines are own-rooted, dry-farmed and certified heritage vineyards.
The 2021 Vintage was extremely dry and ”cold, with frosts during the early growing season. The resulting harvest was very light, with less than half the crop expected on many vines. Harvested from early September (Zin) to early October (Carignan).
Moderately dark in color, this wine presents a complex nose with dark fruits, earth and hints of woodruff. The palate presents well-sculpted tannins supported by a good acid backbone that leads to a long, lingering finish echoing the fruits first found on the nose.
