This carries to a medium to full-bodied, richly textured, balanced Crozes that has velvety tannins, some classic northern Rhône gamey, peppery nuances, and a great finish. It needs a decant if drinking any time soon, but the tannins are supple and ripe, and this beauty will have a broad drink window. I wouldn't be surprised to see it still going strong at age 20. It’s not unlike the hillside Vosne wines which are becoming all the rage now, a finer version of perhaps Petits Monts or Damaudes. The wine becomes more, ahem, Burgundian with air as the spice notes broaden and a touch of underbrush enters the fray, the perfume building and the wine getting silkier.

The agaves used in its production are 100% estate-grown agaves from Los Altos (aka Highlands) of Jalisco. After the agaves cook for three days in a horno (oven), they are then crushed by a two-ton tahona stone. Fermentation and distillation includes not only the aguamiel (cooked agave juice), but the fibers and pulp. It is distilled to proof meaning no water is added. It is bottled without aging at 80 proof. The aroma is as if you buried your nose in a green smoothie filled with fresh-cut cabbage, romaine lettuce, kiwi, pear, aloe vera while preparing a beurre noisette (brown butter). These aromas follow on the palate where you’ll also find ripe heirloom carrots, Kaffir limes and roasted pear. Alluvial galets stud the silty, sandy soil that is riddled with serpentine. High in nickel and magnesium, serpentine creates a caustic environment where Riesling becomes concentrated, and usually high in tartaric acid. Farming practices are dry-farmed, sustainable, while working our way toward full organic farming.
After skin contact, the lot is placed into the press along with the stems (reserved from destemming), and we begin a press cycle of 4-6 hours. Using gravity, the free run and press juice is collected into a chilled, stainless steel tank where it will settle for 24 hours, after which we rack into Austrian Cask, cement egg and barrel with fine and heavy lees. Native fermentation takes place in egg, and neutral barrel. After nine months of lees contact, the wine is racked and blended. No cold stabilization. Given the residual sugar in each wine, we cross-flow the wine before bottling.
