Hillrock Solera Aged Bourbon is the world's first solera aged bourbon. Solera aging is a process that has generally been reserved for aging cognacs, ports and sherries. It involves filling a series of casks at different intervals over a long period of time. As whiskey from the oldest cask is emptied and bottled, the cask is re-filled with an equivalent amount of whiskey from the second-oldest cask in the solera. This cascading effect continues until the youngest cask in the solera is filled with new whiskey. As a result, no cask in the solera is ever fully emptied. In addition, as the younger whiskey ages and cascades through the solera, its average age and complexity gradually increases over time.
Hillrock Solera Aged Bourbon marries Hillrock Estate Bourbon with a mature seed bourbon that was carefully sourced by Pickerell. After cascading through the solera, Hillrock Solera Aged Bourbon is finished in 20 year old Oloroso Sherry casks. The finishing process balances the spicy rye flavors of the bourbon and adds further complexity, with layers of fig, roasted walnuts and candied fruit. The current age of Hillrock Solera Aged Bourbon is over six years and the rye content is approximately 37%.

This is not always the case during En Primeur tastings, when it's the second wines that tend to be a little more open, but it's a feature of the 2018 vintage. This is a brilliant Issan with richness and poise joined by a delicate acidity that pulls the fruit along. The tannins are deceptive, as they are supple and appealing, but the density and power builds over the palate and clearly indicates long ageing. 96 Points! Elegant yet perfectly structured, this is the most floral of the Murrieta Reservas I’ve tasted in recent years. With 8% Graciano and 4% Mazuelo, the nose is perfumed with pretty rose petal and delicate red berry fruit, as well as wild herbal aromas. Blueberry fruit typical of Tempranillo directs the palate, rounded out with a little fleshy Garnacha, and framed by subtle American oak. 95 Points! Their flagship wine comes from one of the finest vintages in recent times. The 2021 Marqués de Murrieta was previously called the Reserva and still qualifies as such, but it's not included in the name now. It was produced with 86% Tempranillo, 8% Graciano, 4% Mazuelo and 2% Garnacha Tinta from their 300 hectares of vines in their Ygay estate on limestone and clay soils with alluvial influence. The grapes were picked between the 27th of September and the 15th of October, and each plot and variety was vinified separately in stainless steel, matured in American oak barrels for 26 months, then blended and kept in concrete for a few months until bottling, which was a longer élevage this year. It's very spicy, peppery, with a combination of berry fruit and some incipient tertiary aromas, hints of forest floor and truffle. It's very Rioja, with clout, elegance and freshness and the elegant tannins that are the signature of 2021. It comes in at 14.3% alcohol with a pH of 3.6, denoting ripeness and balance. A serious Pavillon Rouge, as is typical of the vintage, with fleshy raspberry and bilberry fruits, espresso and cocoa bean, precise and clean-cut, taking serious aim at the tannic frame. This is even more concentrated than 2016 in terms of the analysis, and the intensity of the fruit character suggests long ageing ahead of it. The estate saw 80mm of rain on August 13 but apart from that there was almost no rain for six weeks. 36hl/h yield (compared to 55hl/h in 2016, explaining the extra concentration here), 55% new oak for ageing. - Jane Anson
