The unique white asparagus is truly Spain’s signature vegetable. The artisan harvest takes place between April and June in Navarra, and is carried out today just as it was 100 years ago: by hand. The careful planting process in the fall and the traditional, time consuming cultivation each spring, produces Spain’s only Denomination of Origin white asparagus. Enjoy them in salads, served with cold cuts, or simply try them with extra virgin olive oil and white wine vinegar.
