Pedro Ximenez

Pedro Ximenez (often shortened to “PX”) is mostly grown in Spain, and is used for the production of fortified wine (like Sherry) or a thick dessert wine (often, so viscous that it’s near impossible to empty a glass). Usually the grapes are dried, concentrating the sweetness and thickening the resulting juice, which makes the dessert wines quite sweet, and fairly intense. While table wine is also made, it’s usually not very good. There’s PX in other places in the world, but Spain is where it reaches it’s highest quality.
