American Paddlefish (Polyodon Spathula), often called "Spoonbills," are a cousin to sturgeons and yield roe ranging in color from pale through dark steel-grey and golden "osetra brown". The caviar is smooth and silky with a rich flavor. Paddlefish are one of the oldest fish known to man. Fossil records show that they first appeared 300 to 400 million years ago (50 million years before dinosaurs). Paddlefish along with Sturgeon are two of the most important fish for freshwater caviar.
