Cabernet Sauvignon

Even though Cabernet Sauvignon didn’t originate until the 17th century, it is perhaps the most prominent varietal grown in the world today. Cabernet Sauvignon is a central element of the wines of Bordeaux and of the finest wines of California. Cabernet Sauvignon is grown almost everywhere in the world where fine wine is made-from Lebanon to Australia to Italy, Spain, and South America. It’s thick skin and large seeds (“pips”) give Cab some tannic structure, which helps the grape make some of the longest-aging wines made. Because of its nature, many different winemaking techniques can have a profound influence on the end result, and Cab has a strong affinity for oak. Cabernet Sauvignon can be made in many styles, and there’s a Cab for every palate.
